Claims (22)

1. Способ получения белковой композиции, содержащей гидролизованный белок, который включает стадии, где:
a) обеспечивают смесь ингредиентов, содержащую по меньшей мере один белок и молочный лецитин;
b) добавляют по меньшей мере одну фосфолипазу и выполняют преобразование молочного лецитина;
c) выполняют гидролиз упомянутого белка.
2. Способ по п. 1, в котором гидролиз белка выполняют одновременно с преобразованием молочного лецитина.
3. Способ по п. 1, в котором белок представляет собой концентрат белка молочной сыворотки или фракцию белка молочной сыворотки.
4. Способ по п. 1, в котором молочный лецитин представляет собой нативный молочный лецитин.
5. Способ по п. 1, в котором по меньшей мере одна фосфолипаза представляет собой фосфолипазу А1 и/или фосфолипазу А2.
6. Способ по п. 1, дополнительно включающий этапы, на которых:
d) добавляют масло;
e) сушат.
7. Белковая композиция, содержащая гидролизованный белок, который можно получить в соответствии со способами по любому из пп. 1-6.
8. Способ получения питательного продукта, включающий стадии, где:
a) обеспечивают белковую композицию по п 7;
b) добавляют одно или более питательных веществ.
9. Питательный продукт, который получают способом по п. 8.
10. Питательный продукт по п. 9, отличающийся тем, что эмульгаторы, присутствующие в питательном продукте, получены только из молочного лецитина.
11. Питательный продукт по п. 9, в котором композиция представляет собой эмульсию, предпочтительно эмульсию типа «масло в воде».
12. Питательный продукт по п. 9, в котором композиция представляет собой композицию для энтерального введения или композицию для перорального введения.
13. Питательный продукт по п. 9, в котором композиция представляет собой гипоаллергенный питательный продукт, такой как гипоаллергенная смесь для детского питания или гипоаллергенная питательная смесь для лечебного питания.
14. Питательный продукт по п. 9, в котором степень преобразования лецитина составляет по меньшей мере 20%.
15. Применение белковой композиции по п. 7 при получении питательного продукта.
