Description
The present invention relates to a new milk mousse and a process for the preparation thereof with a high content of active and viable dairy ferments which give it a balanced, low acid and particularly pleasant flavor and delicate, as to its use in the preparation of desserts and what desserts can be obtained. Generally, 'dessert' is the last dish of a meal, consisting mainly of fruit, cheese or sweet. In the present context, the term dessert will exclusively mean a particular candy, served in a cup or a cup, which comprises a mousse bottom layer an intermediate layer with ingredients of a different nature and an upper layer, comprising a foam ( Milk or whipped cream, wherein said layers may optionally be mixed with one another just before being ingested by the consumer.
Many types of desserts falling within this class are in the art the best known of which consist, however, of a lower layer which generally comprises compositions of chocolate, vanilla, coffee or fruit and a top layer exclusively composed of foam (mousse) milky Generally, the ratio of the bottom layer to the top layer is 5 to 7: 1. As used herein the term "mousse" refers to a soft compound which is obtained from milk which, when mixed with the other layers, provides a tasty dessert with a particular and refined taste. Lactic foams are known which are used in association with the mentioned lower layers in order to provide a dessert. In all presently usable products, no milk bacteria emerged from the fermentation process. This can be attributed to the most different factors, probably the treatments that are responsible for the destruction in any way that stays alive.
As mentioned above, all usable mousses do not contain active milk yeasts and have added thickening / emulsifying agents and have been aerated with inert gas in order to obtain a soft and pleasant cream whose soft texture is attributed exclusively to the of having added large amounts of gas to it.
It is therefore an object of the present invention to provide a novel milk 'mousse' which can be used both as a backsheet and optionally also as an overcoat in the usual desserts, which has a soft and fluffy appearance, without needing to be aired with high levels of gas, contains a large number of dairy ferments that remain alive and active, of different type, is free of additives and can be mixed with good
5 resultados finais, além das combinações de camadas baseadas nas bem conhecidas composições de frutos ou café, baunilha, chocolate, também com as novas composições de frutos silvestres, morangos silvestres, café, ovo batido, chocolate e outros novas composições isentas de aditivos alimentares, obtendo-se assim um composto com um aspecto e um sabor particular.5 final results in addition to the combinations of layers based on the well-known compositions of fruits or coffee, vanilla, chocolate, also with the new compositions of wild fruits, wild strawberries, coffee, beaten eggs, chocolate and other new compositions free from food additives, thereby obtaining a compound having a particular appearance and taste.
0 objectivo da invenção é, por conseguinte, obter-se uma nova «mousse láctea», com um sabor equilibrado pouco ácido, e particularmente agradável e delicado, sendo a referida «mousse» isenta de aditivosThe present invention has also been developed for the purpose of providing an improved method for the preparation of the foam (mousse) described above and a dessert of novel design. According to the present invention, the above-mentioned requirements have been achieved by means of a new milk mousse which has a balanced, acidic and particularly pleasant and delicate taste, said mousse being characterized in that it contains a high level of dairy ferments which remain alive and active, which remains constant throughout its storage period and whose presence confers on the product unique and specific structural and organoleptic characteristics. The features advantages, objects and additional aspects of the invention will become apparent to those skilled in the art from the following detailed description and the appended claims. The object of the invention is therefore to obtain a new 'milk mousse' with a slightly acidic and particularly pleasant and delicate flavor, said mousse being free of additives
ATHE
Além de chocolate, as camadas compreendem ovo batido,And having a high level of active and living dairy fermented content which, when combined with the intermediate dessert layer, provide all sweetness with an exquisite and personalized taste. The dairy starters used in the preparation of the present invention are known. Thermophilic yeasts are generally chosen from the different strains of St. Termophiles and / or mesophilic yeasts (St. cremoris, St. lactis, St. diacetylactis and L. cremoris). The above-mentioned ferments may be employed alone or in any respective mixture and this avoids the variability of the structural and organoleptic characteristics that arise when using raw material compositions which can not be compensated by the addition of suitable additives ( aromatic agents, thickening agents, etc.). This is because, in the present case, only natural raw materials are used. However, where their use occurs, the amount of thermophilic ferments is generally 1 to 2%, and the amount of mesophilic ferments is in the range of 0.1 to 0.5%. Incidentally, it should be pointed out that in the fermented milk mixture it is sometimes desirable to suitably add probiotic bacteria, in particular of the acidophilic or the diphtheria type. As mentioned above, also the intermediate layer, with which the mousse will be mixed, may undergo completely new and never mentioned changes. In addition to chocolate, the layers comprise beaten egg,
Os tratamentos térmicos e físicos a que o fruto está sujeito durante a sua preparação, permite explorar, ornais possível as características organolépticas, enquanto que, simultaneamente protege a original textura estrutural.coffee, wild strawberries, wild berries and the like, which can also be used. The fruit based on ingredients takes place, from the fresh fruit suitably chosen. The thermal and physical treatments to which the fruit is subjected during its preparation, allows to explore, or possible the organoleptic characteristics, while simultaneously protecting the original structural texture.
As noted above, the soft appearance of the mousse is generally achieved by aeration with inert gas (nitrogen). With reference to the mousse of the present invention, after the homogenization and cooling process the concentrated fermented product of the milk is subjected to an aeration treatment with inert gas without prior use of the emulsifying and thickening agents which, are employed in order to retain the high amounts of gas. The soft texture of the mousse of the present invention therefore results exclusively from the association of the particular biological and physical treatments which are completely natural.
A preparação dos ingredientes paraAnother object of the present invention is the use of the aforementioned 'mousse' for the preparation of desserts, wherein said 'mousse' is measured in the lower part of the container or even on an intermediate layer of a different nature, and when savoring the three layers mixed or unmixed, a product with a delicate and pleasant taste will be obtained. The preparation of the ingredients for
As composições seguintes para a confecção da camada intermédia, são aqui mencionadas como forma de exemplo, e não num sentido limitativo.δ the intermediate layer is made by means of a technology that assures its totally natural characteristics, thus not needing to use additives capable of stabilizing, coloring, emulsifying or assigning a particular physical characteristic. It is also important to stress that the technology for the manufacture of milk mousse and the particular ingredients gives the final product a new and original aroma, which makes it completely innovative. Low heat treatments by which the ingredients pass, allow the known natural and typically aromatic characteristics to remain unchanged and complete, thus not necessitating the subsequent addition of a natural flavor of integration. The above-mentioned centesimal composition reveals a proportion of nutrients, thus obtaining a dessert combining the delicious aspect with a good nutritional power. The 'milk mousse' and the quantitative proportions of the ingredients were chosen in order to meet the following requirements: (1) better exploitation of the nutritional / salutary properties arising from a higher presence of the fermented milk mousse relative to the ingredients of the intermediate layer, compared to known products, which generally use only an upper layer of 'mousse' (unfermented) in an amount less than that of the lower layer. (2) balanced synergy between 'milk mousse' and the organoleptic characteristics of the ingredients in order to make dessert more palatable, so it is not necessary to add flavorings; and (3) a lower amount of inert gas in the milk mousse to provide a milk richer product while maintaining the soft mousse texture.
This invention further includes an improved process for preparing the aforementioned milk mousse, said process comprising the steps of: a) receiving and storing whole milk adding creams (and optionally sugar), heating the mixture to a suitable temperature and purification by centrifugation. b) heating the centrifuged mixture to a temperature comprised between 90 and 95Â ° C. c) concentrating it in order to evaporate an amount of water comprised between 5 and 13%. D) carry out the bacteriological purification of the mixture by pasteurisation at 95 ° C. e) cool and add the selected milk proteins; f) fermentation at a temperature between 22 ° C and 40 ° C; g) quenching the fermentation at a pH value between 4.9 and 5.4 and heating to 40 ° C and optionally (h) concentrating the fermentation product further by ultrafiltration at 40 ° C, and optionally, ) mixing the concentrated fermented milk with cream (with a fat content of about 35-40%) and sucrose; l) homogenizing and / or softening the blend; m) cool to 4 ° C and then store in an environment of sterile air with overpressure; n) airing and packing.
For manufacturing operations from (a) to (d), such operations are well known to those skilled in the art, therefore it is not necessary to describe them in more detail. On the contrary, it should be noted that the presence in the milk mousse of live and active dairy ferments in a quantity of between 300 and 500 million per gram is essential to obtain the final product of the present invention. As already mentioned, the milk fermentation decreases the pH value due to the production of lactic acid by means of bacteria, which is the starting point. Experimental tests allowed the patent holder to determine the point of interruption (calculated from the fermentation obtained for subsequent ultrafiltration), when the pH value between 4.9 and 5.4 was reached. In known processes this does not occur, since the products always have a neutral ph.
While operation f) should be considered known, it is important to note that the interruption of the fermentation with a given pH value (operation g) is completely new, and that ultrafiltration (operation h) was carried out directly in the acidified milk in order to to enhance the protein level and all the solid material, thus contributing to obtain a natural thickness of the final product. Also the temperature should be chosen so as to preserve the number and viability of the dairy starters, to avoid the preliminary heat treatments, which are generally used in known methods. The mixture of concentrated fermented milk with cream and sucrose is required (step i) to minimize and suppress the acidified appearance that occurs in milk fermentation.
O referidoIn the operation η) the treatment of the mixture was carried out in a suitable installation so as to have the desired soft consistency. It comprises a feed unit with a volumetric pump (for a constant flow rate of the mixture), a unit for injecting inert gas in which the gas mixes with the product, and a cylinder, the walls of which are cooled with ice water. The air injected is carried out in a range of about 20-40% in order to obtain a mousse having a density ranging from 0.6 to 0.8 kg / l. The referred
The aeration occurs without the use and soft texture of the milk mousse; results only from natural physical treatments.
Also the packaging and dosing unit has a new design, in order to avoid, therefore, any phenomenon of deterioration or contamination of the product. The following example is concerned in order to illustrate this invention.
All parts, percentages and proportions referred to herein and in the appended claims are by weight, unless otherwise stated.
The milk was then preheated to 50 to 55 ° C for purification by centrifugation, the centrifuged mixture was further heated to a temperature of 90-95 ° C and concentrated to give evaporating an amount of water comprised between 5 and 13%. Bacteriological clearance of the mixture was then followed by pasteurization at 95 ° C, standing for 5 minutes, cooling to fermentation at a temperature between 22 and 40 ° C and addition of mesophilic milk ferments
16 seleccionados e/ou de fermentos termofílicos, numa quantidade compreendida, respectivamente, entre 1-2% e 0,1-0,5%.16 and / or thermophilic ferments in an amount comprised respectively between 1-2% and 0.1-0.5%.
Said yeasts may be employed as a single component or as any respective mixture and this avoids the variability of structural and organoleptic characteristics arising from the compositions of the raw materials which can not be compensated by the addition of suitable additives (flavoring agents / thickeners), so that in the present invention, only natural raw materials are used. Subsequent fermentation was carried out in reservoirs with sterile air atmosphere with overpressure for a period of 8 to 16 hours, after which the product settled and when a pH value of between 4.9 and 5 was reached, 4, the fermentation was interrupted and the temperature was increased to 40 ° C. The ultrafiltration of the fermented milk was carried out at a mean temperature of 40 ° C, thus obtaining a solid content of 30 to 40%, with the concentrated fermented milk being mixed with the cream (fat content of 35 and 4%) and with sucrose and possibly probiotic bacteria (acidophilic and / or bifido type) were added. The subsequent process for homogenizing and / or softening the thus obtained mixture is carried out in order to provide the product with a particular microstructure. The total product was then cooled in a heat exchanger up to 40øC and transferred to a sterile air environment reservoir with overpressure. t 'w *
The product was then aerated with nitrogen, with an inert gas amount of between 20 and 40%, and the average density after this treatment was between 0.6 and 0.8 kg / l.
At this point, the product has been transferred to the dessert-making facility, equipped with a measuring device for the different layers, thereby obtaining an end product, wherein the ratio of the layers is preferably as follows: Top layer - 3-5% - Intermediate layer -45-50% - Lower layer -45-52% The finished product is wrapped in aluminum foil and placed in a refrigerator at 4 ° C and maintained at this temperature for a period of about 18 to 24 hours, after which the product is ready to be charged.
