Abstract

This treatment process comprises the steps of: 1) Cooling the peaches, apricots, tomatoes and pears to the center for 2 minutes to 2 hours, by showering or immersing with water (optionally containing sodium hypochlorite) having a temperature between 0 and 15C; and 2) Subjecting the fruit to a treatment composition previously heated to a temperature of 40 to 60C, for no more than 10 minutes. The treatment composition consists of: an antioxidant selected from diphenylamine, ethoxyquin, BHA, BHT, ascorbic acid, a tocopherol or a polyphenol; and an antifungal agent selected from thiabendazole, a terpenic compound, ortho-phenylphenol and enilconazole.
