Abstract

Fremgangsmåte for fremstilling av et næringsmiddel fra vegetabilsk protein. Produktet bar en flberstruktur som naturlig muskel og konsistens og utseende som kjøtt. Fremgangsmåten Innbefatter fremstilling av en blanding av vegetabilsk protein og vann. Blandingen blir deretter oppvarmet og ekspandert. Den ekspanderte blanding orienteres ved å utøve trykk i to dimensjoner mens blandingen får bevege seg i den tredje dimensjonen. Produktet er bemerkelsesverdig likt naturlig kjøtt med en makroskopisk fiberstruktur om-fattende parallelle og sylindriske makroskopiske fibrer bestående av vesentlig inn-rettede og sylindriske mikrofibriler. Dessuten er både de makroskopiske fibrene og mikrofibrilene vesentlige frie for en nettformet struktur.
