Description
ENZYMATISCHE MODIFICATIE
De onderhavige uitvinding heeft betrekking op de enzymatische modificatie van verschillende substraten.
De uitvinding betreft verder de producten, die door middel van deze chemische modificatie vervaardigd kunnen 5 worden en hun toepassingen.
Eiwitten van plantaardige en dierlijke oorsprong worden gebruikt in de voedings- en non food industrie. Met name dierlijke eiwitten hebben traditioneel verschillende toepassingen gekend in allerlei voedings-10 middelen en op andere gebieden. Plantaardige eiwitten zijn in beginsel goedkoop en in overvloed verkrijgbaar maar hebben het nadeel dat ze vaak niet de voor een bepaalde toepassing gewenste functionele eigenschappen hebben. Hun gebruik in genoemde toepassingen is derhalve 15 steeds veel beperkter geweest.
De functionele eigenschappen van een eiwit hangen in het bijzonder samen met hun fysicochemische en structurele eigenschappen. Voor industriële toepassing van eiwitten is het vaak nodig een of meer van dergelijke 20 eigenschappen, zoals dispergeerbaarheid, kleur, schuim-vormend vermogen, kleefsterkte, colloïdbeschermende eigenschappen, bevochtigbaarheid, molecuulgrootte of molecuulvorm te verbeteren of veranderen. Dit geldt zowel voor plantaardige als voor dierlijke eiwitten.
25 De chemische en enzymatische modificatie van eiwitten voor verschillende toepassingen is in de literatuur beschreven. Dergelijke modificaties zijn bijvoorbeeld het crosslinken van de afzonderlijke eiwitmoleculen met elkaar en/of andere moleculen. Het is het doel van de 30 uitvinding een ten opzichte van de bekende werkwijzen verbeterde modificatiemethode te verschaffen.
Zoals zal blijken uit de hierna volgende beschrijving van de uitvinding is de sleutelstap in de genoemde modificatiemethode tevens geschikt voor de 35 initiatie van de polymerisatie van bepaalde monomeren en voor de vervaardiging van nieuwe kleurstoffen.
Als sleutelstap in genoemde modificatiemethode ( verschaft de uitvinding een enzymatisch oxidatieproces, __* ^ λ c\ C\ / *' i') \ 0 υ ( 1 "· ~ 2 omvattende het samen brengen van een oxidatief enzym, een waterstofacceptor en een waterstofdonor in een reactie-mengsel en het in het reactiemengsel onder invloed van het enzym doen verlopen van een oxidatieve reactie met 5 tenminste de waterstofacceptor en de waterstofdonor als substraat. Dit enzymatisch oxidatieproces wordt in het onderstaande ook wel "sleutelproces" of "sleutelstap" genoemd.
Afhankelijk van de gewenste toepassing kunnen 10 substraten worden toegevoegd en verschillende typen oxidatieve enzymen, waterstofdonoren en waterstofaccepto-ren worden gekozen.
Het actief samenbrengen van de componenten enzym, waterstofdonor, waterstofacceptor en eventueel een 15 of meer andere substraten teneinde een modificatie van deze substraten te bewerkstelligen is niet eerder beschreven .
Geschikte enzymen zijn bijvoorbeeld peroxidases, in het bijzonder waterstofperoxidase, polyfenol-20 oxidase en lipoxygenase.
Bruikbare waterstofdonoren zijn met name fenolen, fenolzuren of fenolhoudende verbindingen, zoals bepaalde kleurstoffen, in het bijzonder alizarine en zijn afgeleiden, antocyanines, flavonoïden en dergelijke.
25 Waterstofacceptoren zijn bijvoorbeeld water stofperoxide en zuurstof.
Indien bijvoorbeeld gestreefd wordt naar modificatie van eiwitten omvat het reactiemengsel verder een of meer eiwitten als te crosslinken substraat en doet de 30 waterstofdonor dienst als crosslinkend agens hiervoor. De bijzondere voorkeur gaat uit naar fenolen, zoals catechol, of fenolzuren, zoals ferulinezuur, caffeïnezuur, coumarinezuur, vanillinezuur, tyrosine, coniferylalcohol, sinapylalcohol, kaneelzuur, p-coumarylalcohol, sinapine-35 zuur, p-hydroxybenzoëzuur, galluszuur en flavonoïden als crosslinkend agens.

3 eiwitten en/of een of meer in water oplosbaar gemaakte eiwitten en/of mengsels hiervan met een of meer polysac-chariden.
Van nature in water oplosbare eiwitten zijn 5 bijvoorbeeld ovalbumine, runderserumalbumine, cytochroom C, caseïne, collageen, gelatine, soja-eiwit, eiwitten uit groenten of granen, in het bijzonder gluten. De in water oplosbaar gemaakte eiwitten zijn bijvoorbeeld afkomstig uit aardappelen. Een geschikt polysaccharide is zetmeel. 10 De op deze wijze gemodificeerde (gecrosslinkte) eiwitten of mengsels van eiwitten met polysacchariden kunnen verschillende toepassingen hebben. Zo is het mogelijk van nature schuimende eiwitten, zoals ovalbumine en runderserumalbumine, zodanig te modificeren dat ze na 15 schudden in een waterige oplossing leiden tot de vorming van meer en stabieler schuim dan de niet gemodificeerde versies van deze eiwitten.
Ook de geleereigenschappen van sommige eiwitten kunnen door de modificatie duidelijk verbeterd worden. De 20 gels, die door de modificatie verkregen worden kunnen gebruikt worden als additief is desserts, als extrusie-hulpstof in diervoeders en dergelijke.
Eiwitcrosslinking of crosslinking van mengsels van eiwitten met polysacchariden volgens de uitvinding 25 kan verder leiden tot films, die betere eigenschappen hebben dan films vervaardigd van de overeenkomende niet-gecrosslinkte eiwitten of mengsels van eiwitten met polysacchariden. Dit zal in de voorbeelden verder worden geïllustreerd.
30 Welk type product (gel, schuim, film) uiteinde lijk gevormd wordt hangt onder andere af van het gebruikte eiwit en de omstandigheden, enzymhoeveelheid en dergelijke.
Voor schuimvorming worden bij voorkeur eiwitten 35 met gunstige oppervlakte-actieve eigenschappen gebruikt, zoals ovalbumine of BSA, in combinatie met een relatief lage concentratie van het crosslinkend agens (ongeveer 0,5-1% ten opzichte van het eiwit) en een relatief hoge 1 0 0 7 1 5 3 4 concentratie waterstofperoxide (ongeveer 1,5% ten opzichte van het eiwit).
Voor de vervaardiging van gels en films worden caseïne-achtige eiwitten gebruikt met een hogere concen-5 tratie van het crosslinkend agens (ongeveer 1 tot 5% ten opzichte van het eiwit) en lagere concentraties waterstofperoxide (ongeveer 0,3-1,5% ten opzichte van het eiwit).
De producten, die worden verkregen met behulp 10 van de werkwijze volgens de uitvinding, zijn door de aanwezigheid van crosslinkende moleculen in de uiteindelijke structuur anders dan soortgelijke producten, die zijn vervaardigd van eiwitten en/of polysacchariden zonder crosslinkende middelen. Zij verschillen zowel in 15 samenstelling als in eigenschappen. Dergelijke nieuwe producten maken derhalve eveneens onderdeel uit van de onderhavige uitvinding.
Het systeem van een oxidatief enzym, zoals peroxidase, een waterstofdonor, zoals een fenol, en een 20 waterstofacceptor, zoals waterstofperoxide, in combinatie met geschikt gekozen eiwitten, zoals caseïne, kan worden toegepast als additief in verven en lijmen, in stijfsel en kleefmiddelen.
Verrassenderwijs werd gevonden dat het sleu-25 telproces volgens de uitvinding ook gebruikt kan worden voor de initiatie van polymerisatieprocessen, waarbij radicalen betrokken zijn. De waterstofdonor wordt in dat geval door het oxidatieve enzym omgezet in een radicaal, welke vervolgens dienst doet als initiator in de poly-30 merisatie van tevens in het reactiemengsel aanwezige monomeren, in het bijzonder acrylaten.
In een andere variant kan het sleutelproces volgens de uitvinding worden toegepast in de vervaardiging van nieuwe kleurstofmoleculen, die stabieler zijn en 35 minder gevoelig voor veranderingen in de pH. In dat geval is de waterstofdonor een organisch kleurstofmolecuul, welke door de oxidatieve enzymatische reactie wordt gekoppeld aan een of meer andere organische kleurstofmo- 1007153 5 leculen van dezelfde of een andere soort. Het oorspronkelijke organische kleurstofmolecuul is bijvoorbeeld alizarine of een afgeleide daarvan, een antocyaan of een flavonoide. Voorbeelden zijn alizarine natriumsulfonaat, 5 quercitine, myricetine, rutine.
De nieuwe kleurstoffen, die op deze wijze verkregen worden maken eveneens onderdeel uit van de onderhavige uitvinding.
De onderhavige uitvinding zal verder worden 10 verduidelijkt aan de hand van de begeleidende voorbeelden, die slechts gegeven zijn ter illustratie.
VOORBEELDEN VOORBEELD 1
Enzymatische modificatie van eiwitten l.l. Het modificeren van eiwitten voor het verbeteren van hun schuimeigenschappen 5 Eiwitten met bekende schuimeigenschappen, zoals runderserumalbumine (BSA) en ovalbumine, werden behandeld met een systeem van peroxidase, waterstofperoxide en een waterstofdonor ten einde hun schuimcapaciteit en schuim-stabiliteit te verhogen.
10 Een oplossing van 1% eiwit (10 mg/ml) werd bereid in 0,1 M fosfaatbuffer pH 7. Van deze oplossing werd 10 ml in een maatcylinder met een inhoud van 50 ml gebracht, en werden 0,056 mg catechol (o,56% ten opzichte van het eiwit) en 40 μΐ van een 0,00027% oplossing 15 (0,001% ten opzichte van het eiwit) toegevoegd en voor zichtig gemengd met de eiwitoplossing. De enzymatische reactie werd gestart door toevoeging van 50 μΐ 30%-water-stofperoxide (1,5% ten opzichte van het eiwit) aan het reactiemengsel. Na vijftien minuten incubatie werd de 20 oplossing gedurende 10 seconden geschud. Het volume van de vloeistof en van het gevormde schuim werden bepaald door directe aflezing. Om de schuimstabiliteit te bepalen werden de hoogten van respectievelijk het schuim en de vloeistof in de tijd gemeten op intervallen van 30 minu-25 ten.

In alle gevallen werden schuimen met hogere volumina en stabiliteit verkregen met het product volgens de uitvinding. De beste resultaten werden verkregen met ovalbumine. Wanneer ovalbumine werd geïncubeerd met 5 peroxidase, waterstofperoxide en catechol, vertoonde de oplossing een donkerder kleur, maar het volume van het gevormde schuim was ongeveer zes maal groter dan met ovalbumine alleen. Het verkregen schuim onder deze omstandigheden was gedurende ten minste een week stabiel.
10 Schuim dat verkregen werd met niet gemodificeerd ovalbumine bleef slechts gedurende een paar uur stabiel.
Om oplossingen en schuimen met een lichtere kleur te krijgen werd ascorbinezuur toegevoegd aan het reactiemengsel na de incubatie met catechol. Het schuim 15 dat verkregen werd onder deze omstandigheden had een zeer lichte wit-geelachtige kleur en een hoog volume. Echter, de stabiliteit van het schuim verminderde tot dagen, maar het was nog steeds veel hoger dan de stabiliteit van het schuim dat geproduceerd was door middel van het niet 20 gemodificeerde eiwit (figuur 1).
Schuim dat verkregen wordt uit gecrosslinkte eiwitten, en wordt gekenmerkt door een hoge stabiliteit, kan een toepassing vinden in de voedingsindustrie voor de productie van slagroom, mousses, soufflés en dergelijke. 25 1.2. Modificatie van de eiwitten voor het verbeteren van geleereigenschappen
Enzymatische crosslinking volgens de uitvinding kan de gelering van biopolymeren, zoals eiwitten, verbe-30 teren.
Incubatie van 1% eiwitoplossing met 0,0136 mg of 0,00136 mg peroxidase (0,01-0,001% ten opzichte van het eiwit), 10 μΐ 30%-waterstofperoxide (0,3% ten opzichte van het eiwit) en 0,62 mM fenol (1% ten 35 opzichte van het eiwit) leidde tot gelering na 5 minuten voor runderserumalbumine of na 30 minuten voor ovalbumine. De kleur van beide oplossingen en gels varieerde van lichtgeel tot donkerbruin, afhankelijk van het gebruikte 1007133 7 type crosslinkend agens. Het gebruik van een hogere hoeveelheid eiwit voor de crosslinkingsreactie resulteerde in de vorming van gels met een hogere stevigheid en verbeterde eigenschappen. Deze gels kunnen in verschil-5 lende combinaties gebruikt worden voor de bereiding van desserts, als additief in diervoeder etc.
1.3. Vorming van eiwitfilms door enzymatische crosslin-king 10 De biopolymeren (dat wil zeggen eiwitten en polysacchariden) die in de bovenstaande voorbeelden genoemd worden, werden ook gebruikt in de onderstaande experimenten. Alle experimenten werden uitgevoerd bij kamertemperatuur (23-25°C).
15 Eiwitoplossingen werden op verschillende manie ren bereid, als functie van het type eiwit en de modifi-catiemethode. Een 10%-oplossing van caseïne (1 g case-ine/9 ml gedestilleerd water) wordt bereid door verhitting in een waterbad bij 60°C gedurende 30 minuten.
20 Oplossingen van aardappeleiwit werden op een andere manier bereid, omdat aardappeleiwit slecht oplosbaar is. Bovendien werden lagere concentraties aardappeleiwit gebruikt om eiwitoplossingen met een hoge viscositeit te vermijden. In een typisch experiment wordt 0,6 g 25 aardappeleiwit opgelost door het toevoegen van 12 ml 12% SDS. Aan deze oplossing wordt gedemineraliseerd water toegevoegd tot een eindvolume van 16 ml, gevolgd door 4 ml ethanol. In andere experimenten werden dispersies van gluten of aardappeleiwit gebruikt.
30 Zetmeeloplossing werd bereid door het toevoegen van 9 ml gedemineraliseerd water en 1 g zetmeel, het verhitten van het mengsel tot 80°C tot een ondoorzichtige oplossing wordt verkregen en het afkoelen tot kamertemperatuur. Na het afkoelen werd de oplossing gebruikt om 35 eiwit-zetmeelmengsels voor modificatie te gebruiken.
1.3.1. Caseïnefilms i r. n 7 '* r o i u 'J / i ü o 8
In de crosslinkingsexperimenten werd als emul-gator 0,2 g glycerol (1:5, w/w, glycerol:eiwit) aan de eiwitoplossing toegevoegd, gevolgd door toevoeging van 1 ml ethanol. Aan de oplossing werden hoeveelheden va-5 riërend van 10-55 mg van een opgelost crosslinkingsmiddel (5% ten opzichte van eiwit, w/w) en 10 μΐ 30%-H2O2 (0,3% ten opzichte van het eiwit) toegevoegd onder voorzichtig mengen. Vervolgens werd vijf maal 2,72 /ig peroxidase (1:100000, enzym:eiwit) op intervallen van 1 minuut 10 toegevoegd. Het reactiemengsel werd voorzichtig geroerd gedurende 15 minuten tot 2 uur en de eiwitfilms vervolgens gevormd door de oplossing te gieten op platen met een inwendige diameter van 8,5 cm of op vierkante platen van 12x12 cm. De films werden vervolgens geconditioneerd 15 bij 20°C en 60% vochtigheid. De films worden getoond in figuur 2.
De samenstellingen van de films, hun waterop-losbaarheid, mechanische eigenschappen, waterdamp- en zuurstofpermeabiliteit van de films die op deze wijze 20 bereid werden, werd gemeten. De resultaten staan in tabel 1. Om de waterdamppermeabiliteit van de eiwitfilms te verminderen werden experimenten uitgevoerd waarin de hydrofobiciteit van het eiwit gemodificeerd werd door toevoeging van chemische reagentia (bijvoorbeeld glu-25 taaraldehyde of lipiden) aan het reactiemengsel gedurende de enzymatische crosslinkingexperimenten. De eigenschappen van deze films worden eveneens weergegeven in tabel 1.
De films die verkregen werden met enzymatisch 30 gemodificeerd caseïne zwelden, maar losten niet op in water in vergelijking met films van niet gemodificeerd caseïne, die direct oplosten na toevoeging van water. Bovendien hebben de films die verkregen worden met gemodificeerd caseïne een lagere zuurstofpermeabiliteit en 35 verbeterde mechanische eigenschappen in vergelijking met films die verkregen werden door gebruikmaking van niet gemodificeerd caseïne.

9 1.3.2. Caseine-zetmeelfilms
Films van eiwit en zetmeel (als het gebruikte polysaccharide) werden op dezelfde wijze bereid als boven, met het verschil dat een deel van het eiwit ver-5 vangen werd door zetmeel (gewichtsverhouding eiwit:zetmeel variërend van 1:1 tot 1:2, 1:3, 1:4). De films werden gegoten, geconditioneerd bij 20°C en 60% vochtigheid en geanalyseerd voor het bepalen van de eigenschappen (zie tabel 1). De films worden getoond in figuur 3.
10 De op deze wijze verkregen films hebben betere eigenschappen dan die gemaakt zijn met niet gemodificeerd caseïne of niet gemodificeerd caseïne-zetmeelmengsels. De films van niet gemodificeerd caseïne of caseïne/zetmeel konden gemakkelijk opgelost worden door verhitting in 15 water, terwijl de films verkregen uit gemodificeerd eiwit/zetmeel onoplosbaar waren in water en eveneens niet opgelost konden worden door koken in ether gedurende 1 uur of door behandeling met 10% SDS.
Bovendien werd in de oplossing, waarin de 20 enzymatisch gemodificeerde caseïne-/zetmeelfilms gesuspendeerd waren, de afwezigheid van zetmeel bewezen door de jodiumtest. In oplossingen, waarin films gevormd van niet gemodificeerde mengsels van zetmeel en eiwit gesuspendeerd waren, was echter wel zetmeel aanwezig. Deze 25 waarneming is een argument voor crosslinking van zetmeel met het eiwit door de oxidatieve peroxidase gekatalyseerde reactie.
De films bereid uit gemodificeerde zetmeel/ eiwitmengsels hadden betere mechanische eigenschappen dan 30 die welke verkregen werden uit niet gemodificeerd zetmeel -/eiwitmengsels.
1.3.3. Glutenfilms
Door de modificatie van gluten door enzymati-35 sche crosslinking op de boven gepresenteerde wijze konden onoplosbare films met uitstekende mechanische eigenschappen verkregen worden. Het interessantste resultaat was de vorming van een zeer goede film door het behandelen van 1 Oi' ' ‘ 10 gluten door slechts een fenol en waterstofperoxide zonder het toevoegen van peroxidase. De verklaring is dat gluten van zichzelf reeds peroxidase bevat. De aanwezigheid hiervan werd experimenteel gedetecteerd en gekwantifi-5 ceerd met een gemodificeerde versie van de ABTS-test (Arnao et al. (1995) Analytical Biochemistry 18, 335-338). Dit glutenperoxidase katalyseert de crosslinking van gluten in de aanwezigheid van de toegevoegde substraten (fenol en waterstofperoxide). Deze film had eigen-10 schappen, die vergelijkbaar zijn met die van films, welke verkregen worden uit gemodificeerd gluten door de katalytische werking van toegevoegd mierikswortelperoxidase.
De films bereid door de werkwijze volgens de onderhavige uitvinding kunnen toepassing vinden in coa-15 tings voor bijvoorbeeld kaas of voor fruit, dat wordt gebruikt in yoghurt en puddings etc., voor het coaten van papier.

12 VOORBEELD 2
Gecombineerde chemisch-enzymatische polymerisatie van organische monomeren
In de praktijk wordt de radicaalpolymerisatie 5 van organische monomeren (bijvoorbeeld acrylaten, styreen) uitgevoerd bij temperaturen van ongeveer 70-80°C in aanwezigheid van een chemische initiator (bijvoorbeeld kaliumperoxidesulfaat of andere radicaal-precursorverbin-dingen).
10 In de methode volgens de onderhavige uitvinding wordt de polymerisatie geïnitieerd bij een temperatuur van 40°C door het enzymatisch oxidatieve systeem ("sleu-telproces") volgens de uitvinding dat bestaat uit peroxidase, een fenol en waterstofperoxide. De fenolradicalen 15 die gevormd worden door de chemische reactie worden gebruikt als initiatoren voor de radicaalpolymerisatie van acrylaten. De op deze wijze verkregen polymeren hebben een hogere molecuulmassa en betere mechanische eigenschappen dan die welke verkregen worden door middel 20 van klassieke chemische polymerisatie.
In een reactievat worden 200 ml water en 0,2 g SDS gemengd. De oplossing wordt verhit tot 40°C en gedurende 1 uur doorborreld met stikstof om al het aanwezige zuurstof te verwijderen. Vervolgens wordt 12,5 ml butyl-25 acrylaat (0,078 mol) toegevoegd welke eerder gewassen was met 10% NaOH-oplossing om de hydroquinonremmer te verwijderen. De reactie wordt geïnitieerd door toevoeging van 8,8 mg (8,74xl0'5 mol) catechol (opgelost in 5 ml water), 0,34 ml perhydrol (hydrogen peroxide) (10 mM in 30 het reactiemengsel) en 12 mg mierikswortelperoxidase (opgelost in 1 ml water, overeenkomend met een verhouding (w/w) enzym:monomeer=l:10.000). Het mengsel wordt onder mengen gedurende anderhalf uur bij 40°C in reactie gebracht. Na voltooiing wordt de polymeer gescheiden en 35 gegoten op een Petri-schaal.
Het zo verkregen polymeer heeft een molecuulge-wicht van ongeveer 700.000 D in vergelijking met een 1 0 n 7 ·: c o 13 controlepolymeer verkregen door chemische polymerisatie die een molecuulgewicht heeft van 142.000 D.
VOORBEELD 3 5 Enzymatische methode voor de synthese van organische kleurstoffen
Peroxidase katalyseert de oxidatie van een verscheidenheid aan substraten in aanwezigheid van waterstofperoxide (of methyl- en ethylwaterstofperoxides). Een 10 grote verscheidenheid aan organische verbindingen kan als substraat voor peroxidase dienen en zo de rol van waterstof donor in radicaalreacties spelen. Deze categorie omvat onder andere fenolen, aromatische amines en derge-lijke. Aangezien alizarine, een aantal van zijn afgelei-15 den, antocyaninen (CORRECT ??) en flavonoïden, een fenol-eenheid in het molecuul dragen, kunnen zij substraten zijn voor peroxidase. De verwachting is dat de vorming van een dimeer als resultaat van de radicaaloxidatie van elk van deze verbindingen een specifieke kleur zal hebben 20 en ongevoelig zal zijn voor variaties in pH.
In dit experiment worden alizarine natriumsul-fonaat, quercetine, myricetine en rutine gebruikt als substraten voor peroxidase. In een spectrofotometrische cuvette (d=l cm) met 3 ml 0,05 M fosfaatbuffer van pH 6,1 25 worden porties van de reagensoplossingen toegevoegd in de volgende volgorde: 5 μΐ fenoloplossing en 40 μΐ water-stofperoxideoplossing. Het mengsel wordt gehomogeniseerd door mengen en de reactie wordt geïnitieerd door toevoeging van 10 μΐ peroxidaseoplossing. De spectra worden in 30 de tijd opgenomen voor het spectraalgebied 230-800 nm (UV-VIS-spectrofotometer lambda 16, Perkin Elmer), ten opzichte van een referentie die slechts buffer bevat.
De concentraties van de reagentia in het reac-tiemengsel waren 5,6 μg/ml peroxidase, 2,6 mM waterstof-35 peroxide, 7,18xl0'4 M myricetine, ofwel 1,12x10 * M alizarine sulfonaat, ofwel 8,82xl0'5 M quercetine, ofwel l,36x 10'4 M rutine. Voor elk experiment wordt het spectrum van de oplossing van fenolsubstraat opgenomen bij θ=0 (Θ is 1 p .·> w V ƒ r -V l.' * ^ u 14 tijd). Het eindpunt van de reactie wordt gemeten na ongeveer 24 uur.
Het verloop van de enzymatische oxidatie van verschillende kleurstoffen wordt getoond in tabel 2.

Claims (19)
1. Enzymatisch oxidatieproces, omvattende het samen brengen van een oxidatief enzym, een waterstofacceptor en een waterstofdonor in een reactiemengsel en het in het reactiemengsel onder invloed van het enzym doen 5 verlopen van een oxidatieve reactie met tenminste de waterstofacceptor en de waterstofdonor als substraat.
2. Proces volgens conclusie 1, waarbij verder een te crossiinken substraat in het reactiemengsel aanwezig is en de waterstofdonor dienst doet als crosslinkend 10 agens hiervoor.

11. Proces volgens een der conclusies 1-10, waarbij de waterstofacceptor waterstofperoxide en/of zuurstof is.
12. Werkwijze voor het crosslinken van een of 15 meer eiwitten of mengsel van een of meer eiwitten met een of meer polysacchariden, omvattende het samen brengen van de eiwitten of het mengsel van eiwitten met polysacchariden met een oxidatief enzym, een waterstofacceptor en een waterstofdonor in een reactiemengsel en het in het reac-20 tiemengsel onder invloed van het enzym doen verlopen van een oxidatieve reactie, die leidt tot crosslinking van de eiwitten en/of de eiwitten met de polysacchariden.
13. Werkwijze volgens conclusie 12, met het kenmerk, dat de eiwitten van nature in water oplosbare 25 eiwitten zijn, in het bijzonder ovalbumine, runderseru-malbumine, cytochroom C, caseïne, collageen, gelatine, soja-eiwit, eiwitten uit groenten of granen, in het bijzonder gluten, of in water oplosbaar gemaakte eiwitten, in het bijzonder eiwitten afkomstig zijn uit aardap-30 pelen, waarbij het polysaccharide voor zover aanwezig zetmeel is, waarbij de waterstofdonor wordt gekozen uit fenolen, in het bijzonder catechol, fenolzuren, in het bijzonder ferulinezuur, caffeïnezuur, coumarinezuur, vanillinezuur, tyrosine, coniferylalcohol, sinapylalco-35 hol, kaneelzuur, p-coumarylalcohol, sinapinezuur, p-hydroxybenzoëzuur, galluszuur en flavonoïden, fenolhoudende verbindingen of onverzadigde vetzuren, in het >, o r- 7 1 h Pi i o υ i s ·-’ 'J bijzonder linoleenzuur en waarbij de waterstofacceptor waterstofperoxide en/of zuurstof is.
14. Werkwijze voor het polymeriseren van acry-laten, omvattende het in en reactiemengsel samenbrengen 5 van acrylaatmonomeren met een oxidatief enzym, een water-stofacceptor en een waterstofdonor en het in het reactie-mengsel onder invloed van het enzym doen verlopen van een oxidatieve reactie, teneinde de waterstofdonor om te zetten in een radicaal voor initiatie van de polymerisa- 10 tie van de monomeren, en het verder laten verlopen van de polymerisatie.
15. Werkwijze voor het vervaardigen van multi-meren van kleurstofmoleculen, omvattende het in een reactiemengsel samenbrengen van een of meer fenolhoudende 15 kleurstoffen als waterstofdonor met een oxidatief enzym en een waterstofacceptor en het in het reactiemengsel onder invloed van het enzym doen verlopen van een oxidatieve reactie met de waterstofdonor als substraat voor het vervaardigen van multimeren van twee of meer kleur- 20 stofmoleculen.
16. Stabiel schuim, te verkrijgen door het proces volgens conclusies 1-4, 10 of 11 of de werkwijze volgens conclusie 12 uit te voeren met een van nature reeds schuimvormende eigenschappen bezittend eiwit, zoals 25 ovalbumine of runderseruma1bumine.
17. Eiwitgel, te verkrijgen door het proces volgens conclusies 1-4, 10 of 11 of de werkwijze volgens conclusie 12 uit te voeren met een van nature reeds gelerende eigenschappen bezittend eiwit, zoals ovalbumine 30 of runderserumalbumine.
18. Eiwitfilm, te verkrijgen door het proces volgens conclusies 1-4, 10 of 11 of de werkwijze volgens conclusie 12 uit te voeren met een of meer eiwitten, zoals caseïne, of een mengsel van een of meer eiwitten en 35 een of meer polysacchariden, zoals zetmeel.
19.
