Abstract
Se describe un proceso para la produccion de levadura para elaboracion de pan el cual comprende la fermentacion de una capa de levadura para elaboracion de pan utilizando una fuente de carbono que no es malas hasta que se forma un caldo de fermentacion que tiene por lo menos 10%, de manera preferible por lo menos 13%, de manera más preferible por lo menos 16% de solidos secos, la cual puede ser utilizada directamente como una levadura de crema sin concentracion.
