Abstract

La presente invención se refiere a composiciones nutricionales líquidas, claras, estables en anaquel que tienen un pH que varía de 2.5 a 4.6 y que comprenden agua; por lo menos una fuente de EGCg en una cantidad suficiente para proveer 200-1700 mg/l de EGCg; y por lo menos una fuente de proteína en una cantidad suficiente para proveer 25-45 g/l de proteína total. Las composiciones nutricionales líquidas, claras, estables en anaquel pierden no más de 20% en peso de sólidos del contenido de EGCg presente en la formulación inicial de las composiciones por epimerización, degradación, o tanto epimerización como degradación durante la esterilización con calor. En ciertas modalidades, la pérdida de EGCg queda demostrada por la cantidad de producto de epimerización GCg presente en la composición nutricional líquida, clara, estable en anaquel después de la esterilización con calor. También se describen en la presente solicitud métodos para preparar las composiciones nutricionales líquidas, claras, estables en anaquel.
