Abstract

L'invention porte sur un procédé pour la détoxication de produits alimentaires et/ou de matières premières alimentaires contaminés par des aflatoxines, tels que par exemple des céréales et des noix, en particulier des pistaches, comprenant l'étape consistant à atomiser ou nébuliser du peroxyde d'hydrogène à une concentration allant de préférence de 1 à 30 % sur les produits alimentaires et/ou les matières premières alimentaires devant être détoxiqués. Ce traitement entraîne l'élimination ou la réduction de la teneur en aflatoxines à la fois sur la surface du produit alimentaire traité et en profondeur dans celui-ci.
