Claims (23)
- 실질적으로 비-응집된 카제인 미셀로서 지방이나 크림의 전부나 일부를 대체하는 것을 포함하고, 카제인 미셀이 총중량에 대해서 최소한 약6%의 양으로 위프되거나 또는 정지상태로 동결되거나 또는 냉동된 디저트에 존재하는 것을 포함하는 위프되거나 정지상태로 동결되거나 또는 냉동된 디저트에서 지방이나 크림을 감소시키는 방법.
- 제1항에 있어서, 카제인 미셀농도가 디저트의 중량의 최소한 약7%가 되는 방법.
- 제2항에 있어서, 카제인 미셀농도가 식품제품의 8 내지 12중량%범위가 되는 방법.
- 제2항에 있어서, 식품제품이 동결된 낙농물 디저트인 방법.
- 제2항에 있어서, 디저트가 거품이는 크림(mousse), 푸딩 또는 위피드 토핑(whipped topping)인 방법.
- 제1항에 있어서, 비-응집된 카제인 미셀의 주요 부위에 한외여과된 탈지우유 또는 철저여과된(diafilter-ed) 탈지우유인 방법.
- (a) 실질적으로 비-응집된 미셀의 최소한 약6중량%, (b) 감미료, (c) 향미, (d) 안정화제 및 (e) 물을 포함하는 아이스크림-같은 저지방 또는 지방없는 동결된 낙농물 디저트.
- 제7항에 있어서, 카제인 미셀 농도가 최소한 약7중량%인 동결된 낙농물 디저트.
- 제8항에 있어서, 카제인 미셀 농도가 약 8내지 12중량%범위인 동결된 낙농물 디저트.
- 제8항에 있어서, (f) 전분 및 (g) 계란노른자를 포함하는 동결된 낙농물 디저트.
- 제10항에 있어서, 비-응집된 카제인 미셀의 주요부분에 한외 여과된 탈지우유 또는 철저여과된 탈지우유가 제공된 동결된 낙농물 디저트.
- 지방이나 크림을 포함하고 약 5.6이상의 pH를 가지는 디프, 퍼짐, 소스 또는 아이싱 식품제품에 있어서, 개량이 카제인 미셀이 최소한 약 4중량%의 양으로 식품제품에 존재하는 실질적으로 비-응집된 카제인 미셀을 가진 지방이나 기름의 실질적으로 전부나 일부를 포함하는 개량된 식품.
- 제12항에 있어서, 비-응집된 카제인 미셀의 농도가 최소한 약 5중량%인 개량된 식품제품.
- 제13항에 있어서, 비-응집된 카제인 미셀의 주요부분에 한외여과된 탈지우유나 또는 철저여과된 탈지우유가 제공된 개량된 식품제품.
- 제14항에 있어서, 카제인 미셀 농도가 약 6내지 12중량%의 범위인 개량된 식품제품.
- 제15항에 있어서, 식품제품이 퍼짐(spread)인 개량된 식품 제품.
- 제13항에 있어서, 식품제품이 아이싱인 개량된 식품제품.
- 다수의 실질적으로 비-응집된 카제인 미셀의 수에서 최소한 약 50%를 가지는 것을 특징으로 하는 전지우유의 입촉감(mouthfeel)을 가지는 영양가를 높인 탈지우유.
- 제17항에 있어서, 카제인 미셀 농도가 최소한 약 3.5중량%인 영양가 높인 탈지우유.
- 제19항에 있어서, 카제인 미셀 농도가 최소한 약 5중량%인 제품.
- 제20항에 있어서, 카제인 미셀 농도가 최소한 약 6중량%인 제품.
- 다음성분을 포함하는 저지방의 동결된 낙농물 디저트 :성분 양(중량%)설탕 10-20안정화제 0-1.0한외여과된 우유단백질 3.7-10.2계란노른자 0-3옥수수물엿 고형분 0-5전분 0-1우유고형분 6-12물함량 60-70
- 카제인 미셀이 최소한 약 4중량%의 양으로 아이싱, 디프, 퍼짐 또는 소스에 존재하는 실질적으로 비-응집된 카제인 미셀으로서 지방이나 기름을 대체하는 것을 포함하는 아이싱, 디프, 퍼짐 또는 소스에서 지방이나 기름의 감소방법.※ 참고사항 : 최초출원 내용에 의하여 공개하는 것임.
