(3) 항아리 속에 걸러진 깨끗한 층층나무수액 100중량부에 대해 숙성된 메주 35 내지 45 중량부를 넣고 35~45일 동안 숙성시키는 단계;
(4) 상기 단계에서 항아리 속에서 숙성된 메주를 꺼내고, 별도의 간장용 항아리 속에 고운 채에 받혀서 내린 후, 햇볕이 드는 곳에 입구 부분에 망사를 씌워 6개월 내지 2년간 숙성시키는 단계; 및
