Abstract
Description
녹차에 에탄올 수용액으로 85 내지 90℃에서 3시간 동안 1차 추출한 다음, 동일한 용매로 동일한 조건하에 2차 추출을 완료하여, 진공회전증발기에서 농축하고 농축액에 물을 가하여 2 내지 3배로 희석시키고, 원심분리하여 고형성분을 완전히 제거한 다음, 모아진 상등액을 1.2배의 클로로포름으로 2회 추출하여 클로로포름층을 제거하고, 수층을 1.2배의 에틸아세테이트로 4회 추출하여 얻은 액을 합한 후, 추출용매가 완전히 없어질 때까지 감압건조시켜 건조물을 소량의 물로 용해시켜 제조된 것으로서 에피갈로카테킨-3-갈레이트(EGCG, C22H18O11, 분자량 458.4), 에피갈로카테킨(EGC, C15H14O7, 분자량 306.3)와 에피카테킨-3-갈레이트(ECG, C22H18O10, 분자량 442.5)를 함유하는 녹차추출물 30∼50 중량부를;
혼합하여 가열하면서 포도당, 갈락토스, 리보오스, 맥아당, 설탕, 젖당, 녹말, 글리코겐 및 셀룰로오스 중에서 선택되는 어느 하나의 코팅제를 아마씨유와 녹차추출물의 혼합물에 대하여 1∼10 중량부 사용하면서 코팅하여 수용성 아마씨유 분말 함유 식품첨가제를 제조한 후 상기 수용성 아마씨유 분말 함유 식품첨가제를 식품에 첨가하여 오메가-3 지방산을 다량 함유하는 식품을 제조하는 것을 특징으로 하는 오메가-3 지방산을 다량 함유하는 식품을 제조하기 위한 수용성 아마씨유 분말 함유 식품첨가제 조성물에 관한 것이다.
본 발명에서 사용하는 녹차추출물은 30∼50 중량부가 바람직하고, 30 중량부 이하 경우 아마씨유가 산패될 수 있는 문제점이 있고 50 중량부 이상 경우 오메가-3 지방산의 함유량이 떨어지는 문제점이 있다. 본 발명에서 사용하는 코팅제는 1∼10 중량부 함유된 것이고, 1중량부 이하 경우 균일 코팅이 잘 되지 않은 문제점이 있으며, 10 중량부 이상 경우 오메가-3 지방산의 함유량이 떨어지는 문제점이 있다.
본 발명에서 사용하는 녹차 추출물은 녹차(Theae sinensis L., Theaceae-var. bohea 中yabugida, 제주도산)에 에탄올수용액으로 85 내지 90℃에서 3시간 동안 1차 추출한 다음, 동일한 용매로 동일한 조건하에 2차 추출을 완료하여, 진공회전증발기에서 농축하고 농축액에 물을 가하여 2 내지 3배로 희석시키고, 원심분리하여 고형성분을 완전히 제거한 다음, 모아진 상등액을 1.2배의 클로로포름으로 2회 추출하여 클로로포름층을 제거하고, 수층을 1.2배의 에틸아세테이트로 4회 추출하여 얻은 액을 합한 후, 추출용매가 완전히 없어질 때까지 감압건조시켜 건조물을 소량의 물로 용해시켜 녹차추출엑기스를 수득한다.
Claims (4)
- 제과, 제빵, 빙과, 아이스크림, 음료 및 야채 식품에 첨가되는 식품첨가제 조성물에 있어서, 상기 식품첨가제 조성물은 리놀렌산(linolenic acid), 에이코사펜타에노익산(Eicosapen aenoic acid) 및 도코사헥사에노익산(Docosahexaenoic acid)을 함유하는 아마씨유 50∼70 중량부; 및녹차에 에탄올 수용액으로 85 내지 90℃에서 3시간 동안 1차 추출한 다음, 동일한 용매로 동일한 조건하에 2차 추출을 완료하여, 진공회전증발기에서 농축하고 농축액에 물을 가하여 2 내지 3배로 희석시키고, 원심분리하여 고형성분을 완전히 제거한 다음, 모아진 상등액을 1.2배의 클로로포름으로 2회 추출하여 클로로포름층을 제거하고, 수층을 1.2배의 에틸아세테이트로 4회 추출하여 얻은 액을 합한 후, 추출용매가 완전히 없어질 때까지 감압건조시켜 건조물을 소량의 물로 용해시켜 제조된 것으로서 에피갈로카테킨-3-갈레이트(EGCG, C22H18O11, 분자량 458.4), 에피갈로카테킨(EGC, C15H14O7, 분자량 306.3)와 에피카테킨-3-갈레이트(ECG, C22H18O10, 분자량 442.5)를 함유하는 녹차추출물 30∼50 중량부를;혼합하여 가열하면서 포도당, 갈락토스, 리보오스, 맥아당, 설탕, 젖당, 녹말, 글리코겐 및 셀룰로오스 중에서 선택되는 어느 하나의 코팅제를 아마씨유와 녹차추출물에 대하여 1∼10 중량부 사용하면서 코팅하여 수용성 아마씨유 분말 함유 식품첨가제를 제조한 후 상기 수용성 아마씨유 분말 함유 식품첨가제를 식품에 첨가하여 오메가-3 지방산을 다량 함유하는 식품을 제조하는 것을 특징으로 하는 오메가-3 지방산을 다량 함유하는 식품을 제조하기 위한 수용성 아마씨유 분말 함유 식품첨가제 조성물.
