Description
The present invention relates to a beer filtration device, and more particularly, to a beer filtration device that can achieve an improved filtration effect compared to the conventional beer filtration device, and enables an efficient and economical beer production.
Beer production is made by sprouting barley first to make malt, then making malt with malt and starch supplements and adding hops to boil pearls and then cool them. Brewed yeast is fermented into beer yeast, stored and matured for a certain period of time, filtered, and then commercialized into draft beer, and pasteurized into bottles or cans for long-term storage of beer. same.
Maltase is the main purpose of sprouting barley to produce the maltase amylase. At this time, changes in other substances occur, such as protein degradation, production of soluble carbohydrates, and solubility of the embryonic cell membrane. Amylase converts starch in malt and side ingredients into fermentable sugars that can be used by yeast during the saccharification process. Immediately after harvest, barley is not enough to germinate, so it should be stored for at least 6 to 8 weeks to ensure sufficient germination. This period is called barley dormancy. The dormant barley is selected according to the size of the grains to remove contaminants through the selector and to make a homogeneous malt, and the vein is used as feed. The barley, which has been selected as a uniform grain, is soaked in an acupuncture vessel to absorb the moisture necessary for germination, and then transferred to the germination chamber to ventilate moist air on the germination bed with small holes. During this germination, barley produces enzymes and turns them into materials suitable for beer production. This germination process is completed for 5 to 8 days is called green malt (綠 麥芽). Since malt contains a lot of water, it is heated and dried to stop the growth of green malt, and to give the malt-specific aroma and pigments necessary for beer. After brewing, the malt is re-selected, cooled, stored in a malt store, and ripened before being used for beer production.
Manufacture of wort
The production of wort consists of crushing, immersion, wort filtration, wort chop and hop addition, wort cooling, and the like. That is, the malt is selected again before soaking, pulverized in a grinder, and mashed at water and temperature. In this immersion, the action of the malt enzyme solubilizes the insoluble matter in the malt and turns the starch into fermentable sugar. Therefore, in the immersion, raw materials, quantity, temperature and time, and other conditions are given to appropriately regulate the enzyme action. After saccharification and proteolysis in the immersion process, beer bak (麥 酒 粕) and juice are separated using a filtration tank or strainer. Beer foil is removed and used as feed, and wort is collected in a boiling pot and chopped by adding hops. The purpose of mercy is to concentrate wort, leap out the bitter components and aromas of hops and heat them to precipitate coagulant proteins or tannins, stop enzyme activity and sterilize. The hops are separated from the mercy wort and then quenched with a cooler and sent to the fermentation chamber.
주발효Fermentation
The fermented alcohol is fermented by adding about 0.5% brewer's yeast to the cooled wort. This is called main fermentation. The main fermentation is carried out in an open vessel or closed tank of the fermentation chamber. In the case of bottom fermentation, it takes 8 to 12 days at 5 to 10 ° C. First, yeast is added to the fermenter in the cooled wort, and the yeast grows and reproduces at the same time, and consumes fermentable sugars and releases alcohol and carbon dioxide. This process is represented by the chemical formula C6H12O6 = 2C2H6OH + 2CO2. At this time, the fermentation process is controlled so that the main fermentation is completed in about 8 to 12 days through temperature control without leaving the fermentation intact. The fermentation state is usually the most vigorous germination until the third day after the addition of yeast and the number of yeasts distributed in the wort reaches the highest in 4 to 5 days, with the most fermentation. At the end of all fermentation, the yeast sinks under the fermenter and is separated from the fermented beer. The fermented beer after the main fermentation is called yong beer.
후발효Post fermentation
Post-fermentation, also known as lagering, proceeds very slowly in a closed tank and takes 1 to 4 months. Cooling equipment should be installed at low temperature of 0 ~ 2 ℃ and kept warm. The purpose of the post fermentation is to clear fermented beer during storage such as ① re-fermentation of fermentable extract, ② saturated carbon dioxide in beer, ③ sedimentation separation of yeast or precipitate, and ④ co-aging of immature beer's coarse taste and aroma. Will change to The post-fermentation tank controls the pressure by installing a gas regulator to saturate the carbon dioxide in the beer.
The beer matured in the storage tank is filtered into a clear beer. The purpose of the filtration is to remove ① unsuspended and partially suspended in yeast, precipitated absorbent paper or protein in post-fermented beer, and ② to remove unstable colloids that cause cloudiness in beer. Beers in several storage tanks are mixed and combined, and cooled to a temperature just before freezing to prevent evaporation of dissolved carbon dioxide and precipitation of proteins. Beer filters include cotton filters, diatomaceous earth filters, sheet filters, thin film filters, and the like.
In particular, the filtration process is a process for removing various foreign matter suspended from wort, which is a very important process to determine the quality of beer products. Currently commonly used filter is a thin film filter using a membrane filter, such as a thin film filter, a simplified block diagram is shown in FIG.
Referring to Figure 1, the wort flowing into the filtration tank from the storage tank (storage tank) is filtered by a membrane (filtration foil) located at the bottom of the filtration tank. That is, as the filtration process proceeds, the filtered wort is present in the lower part of the filtration foil, and various turbid materials present in the upper part of the filter are present. The filtered wort is obtained by opening a valve in the lower part of the filtration tank. Removed after time elapses. However, in the conventional large-scale production process, the turbidity layer (filtration foil layer) stacked on top of the filter foil exerts an extreme load on the filter foil, and further, the non-uniformly stacked filter foil layer is locally applied to the filter foil. By applying an excessive load, there is a problem that the efficiency of the filtration process falls. In addition, the excessively applied load shortens the life of the filtration foil, thereby reducing the operating time of the beer filtration device.
Therefore, the problem to be solved by the present invention is to provide an economic beer filtration device having an improved filtration performance, while having excellent filtration performance.
In order to solve the above problems, the present invention is a beer filtration device having a filtration tank and filtration foil, spaced apart on the top of the filtration foil, rotatable stirring blade during the filtration process; And it is coupled to the stirring blade spaced apart from each other, and provides a beer filtration device comprising a plurality of stirring plates spaced apart from the top of the filter foil.
The stirring blade is in the form of a horizontal member, the stirring plate may be a metal plate of the rectangular shape. It can also achieve an angle of 30 to 75 degrees with the stirring blade. Furthermore, the stirring blade may rotate at 65 to 75rpm during the filtration process.
Beer filtration device according to the present invention can achieve improved filtration effect compared to the conventional beer filtration device, and enables more economic beer production.
As described above, the inventor designed and manufactured a new filtration device to improve the performance of filtration during beer production.
2 is a structural diagram showing a filtration device according to the present invention.
Referring to FIG. 2, a
The specific structure of the stirring blade is the same as in FIGS.
3 and 4, the stirring blade according to an embodiment of the present invention is a horizontal member, six stirring plates have a structure that can be coupled to be spaced apart from each other. In addition, as shown in Figure 4, each stirring plate is rotatable, and according to the user can change the angle formed by the stirring plate and the stirring blade. However, the angle of the stirring plate is preferably 30 to 75 degrees, more preferably about 60 degrees. If the angle of the stirring plate is out of the range, the filtration performance of the filtration device is reduced and the significance of the numerical value of the angle of the stirring plate in the following experimental example will be described in more detail.
In addition, the stirring blade according to an embodiment of the present invention makes the morphology of various impurities stacked by rotating during the filtration process, particularly, the rotation speed of the stirring blade is preferably 65 to 75rpm. If outside the above range, the filtration performance of the filtration device is reduced will be described in more detail in the following experimental example.
Filtration device according to the invention
5 and 6 show photographs of the filtration apparatus according to the present invention.
5 and 6, the filtration device includes a cylindrical filtration tank and a filter foil provided in the lower portion of the filtration tank. In particular, the filtration apparatus according to the present invention is provided with a stirring blade in the form of a horizontal member (horizontal frame) rotatable during the filtration process by combining a plurality of stirring plates and the stirring plate spaced apart from each other in a rectangular shape provided on the upper portion of the filter foil. . In addition, as can be seen through the figure, the stirring blade is connected to the motor, it can rotate at a constant speed during the filtration process. In this case, the stirring plate coupled to the stirring blade makes the filter foil layer uniform while rotating in the filter foil layer. In particular, in the case of the beer filtration device according to the present invention, the filtering effect is significantly different depending on the speed of the stirring blade and the angle of the stirring plate. It appears, which will be described in more detail in the following experimental example.

The filtration device manufactured according to one embodiment of the present invention was operated in the following order.
Filtration process according to the present invention
7 is a schematic view showing a filtration step using the filtration device of the present invention.
Referring to FIG. 7, the angle of the stirring plate is fixed to various conditions such as 90 degrees, 45, 30 degrees, 15 degrees, etc. with respect to the frame of the stirring blade, and then inserted into the filter medium of the filtration tank to be almost in contact with the saccharified solution. Fill up to 25 cm height of the stirrer. After the rotation of the stirring blade was divided into various conditions of 15 rpm, 30 rpm, 45 rpm, stirred for 5 minutes and stopped, and then the stirring blade was raised so that the lower part of the stirring plate was positioned at the 7 cm upper height of the filter medium. After stirring was terminated and left for 30 minutes to form a filter layer. Thereafter, the discharge valve at the bottom of the filtration tank is opened to obtain a filtrate. However, the filtrate for the first five minutes is not used because it contains a considerable amount of debris formed in the bottom of the filter tank during the operation.
실험예Experimental Example
교반날Stirring blade 회전속도 및 Rotation speed and 교반판Stirring plate 각도 Angle
In this experimental example, the efficiency of the filtration process according to the stirring blade rotation speed and the stirring plate angle was compared.
First, Figure 8 is a cross-sectional view showing the morphology of the filter foil layer (that is, impurity layer laminated on the filter foil after filtering) according to the rotational speed of the stirring blade.
Referring to FIG. 8, when the rotation speed of the stirring blade is low, the surface of the filter foil layer is uneven, and the surface becomes flat as the rotation speed gradually increases, and when the rotation speed is 90 rpm or more, the central portion of the filter foil. The phenomenon which becomes convex was observed.
9 is sectional drawing which shows the morphology of the filter foil layer according to the angle which a stirring plate makes with a stirring blade.
Referring to FIG. 9, the smaller the angle between the stirring blade and the stirring plate was, the more flat the surface of the filter foil was. However, when the abnormality was reached (75 degrees), the filter foil layer was oriented toward the side wall of the filter tank.
Thus, the nonuniform profile of the filter foil layer imposes a significant level of load on the filter foil, thereby reducing the performance of the filter foil.
Turbidity Measurement
The change in turbidity with the inverse meaning of the filtrate depending on the filtration conditions is shown in FIGS. 10 and 11.
10 is a graph showing the turbidity of the filtrate obtained after filtration under the same conditions but with different conditions (30, 70, and 130 rpm) of the stirring blade rotation speed.
Referring to FIG. 10, the filter foil layer becomes more homogeneous and flat when the rotational speed is 70 rpm compared to the case where the rotational speed is 30 rpm, and as a result, the turbidity of the filtrate is reduced the most. Concentrating in the center of the filtration foil, the filtration foil layer at the wall portion becomes thinner, resulting in an increase in the turbidity of the filtrate. As a result, it can be seen that the stirring blade of the filtration device according to the present invention preferably has a rotation speed of 65 to 75 rpm, which is most excellent in turbidity reduction effect.
11 is a graph showing the turbidity of the filtrate according to the angle of the stirring plate.
Referring to FIG. 11, when the angle is reduced to less than 30 degrees, turbidity is increased, which is not preferable. In particular, the agitation force is suitable at about 60 degrees, so that the filter foil layer is flat and uniformly formed, resulting in low turbidity. The thin layer was analyzed to increase the turbidity of the filtrate. This also indicates that the angle of the stirring plate also has an optimum point.
