Abstract

PURPOSE:To obtain the titled accelerator, containing a stable type crystalline powder of a fat and oil consisting essentially of a 1-, 3-saturated and 2-unsaturated type triglyceride having a specific number of carbon atoms and capable of omitting and facilitating tempering work on a mass of chocolates. CONSTITUTION:The titled 1-, 3-saturated and 2-unsaturated type powdery accelerator containing (A) preferably 0.005-10wt.% (based on the oil of an oily composition) stable type crystalline powder of a 50-60C triglyceride in fatty acid residues and (B) a dispersing agent (e.g. saccharides having <=50mu particle diameter). When the above-mentioned accelerator is added to a mass of chocolates without melting and the resultant mass of chocolates is cooled and solidified, enrobing can be carried out in an early stage with quick drying to provide chocolates having excellent gloss, luster and texture.
