Abstract

PURPOSE:To provide a defoaming agent for bean curd, containing a polyricinoleic acid ester, soybean phospholipid, one or more salts selected from Ca or Mg carbonate, phosphate or silicate, and animal or vegetable oils or fats as eseential components, and capable of suppressing and eliminating the foam generated by the heating of an aqueous solution of vegetable proteins such as soybean and the foam generated by the pouring of soya milk.
