本発明は可食性水難溶性物の製造方法に関し、より詳細
には、冷温の度合に応じ、可逆的に液状と凝固状との間
を状態移動する可逆性コンニャクの水性物を単独又は他
の物質と混合し、それを乾燥せしめて、水難溶性とする
ことを特徴とした可食性水難溶性物の製造方法に関する

酸カリ、水酸化カルシウム、炭酸カルシウム、亜硫酸ナ
トリウム、炭酸マグ不ンラム、炭酸水素ナトリウム、炭
酸水素アンモニウム、炭酸アンモニウム等の単独又は混
合した上記薬剤を添加、混和したものをPH10,0以
内にPHg節したPH域に於いて70℃以上に加熱処理
等して、冷温の度合に応じて可逆的に液状エリ、凝固状
との間を状態移動する可逆性コンニャクを生成せしめる
