Abstract

PURPOSE: To remove or reduce an offensive smell of a soup stock, decoction of a crude drug extract, by adding a maltol to the soup stock, etc.
CONSTITUTION: A maltol, e.g. maltol, maltol ethyl ether or isomaltol, is added to a soup stock of a small fish for the stock, extract of whale meat, beef extract, extract from bones after removing chicken from broilers, extract of pig bones or decoction of a crude drug to remove an offensive smell thereof.
