Abstract

PURPOSE: Rice is, immediately after water is added thereto, treated with high- temperature steam or hot air for a short time and cooled, thus omitting the washing process to increase the storability and improving the quality of the polished rice because cracking of rice grains is prevented on boiling.
CONSTITUTION: Unpolished rice is fed from the inlet 5 and polished in the chamber 4. At the same time, water is fed through the ultrasonic wave nozzles in the pipe shaft 3 of the polishing rotor whereby moisture is given to the rice to form a luster layer on the surface of the rice. Then, the rice is sent to steamer 20 where water is added by the steam from the steam generator 25. Before the water penetrates into the rice grains, they are sent to the tank for treating the rice 33 where the rice grains are heated by a hot air heated over 100°C from the hot-air generator 33 within 30sec. So, the surface of the rice grains becomes pasty. Then, the grains are taken out of the outlet 35 and cooled.
