PURPOSE: To obtain a binding composition for preparing a starchy noodle, by incorporating an α-starch with dextrin in a specific proportion.
CONSTITUTION: An α-starch is incorporated with dextrin having a D.E. of 5W40, preferably 10W30, at a weight ratio between the former and the later of (60W95): (5W40), preferably (70W90):(10W30), and 2W4wt%, based on a raw material, resultant binder is mixed therewith. Water is then mixed with the resultant mixture to give a moisture of 45W50%.
