Abstract

PURPOSE: Fish spawn for food is impregnated with an aqueous solution of magnesium sulfate or sodium magnesium sulfate to effect processing for storage.
CONSTITUTION: Fish spawn for food such as spawn of salmon, cod or sturgeon is impregneated with aqueous magnesium sulfate or sodium magnesium sulfate. When the concentration of the aqueous salt is 5W15%, the spawn becomes half hard in 6hr; in 15W20% it becomes hard in 2W3hr; in 20W40%, more harder in 1W2hr and in supersaturation, it becomes more harder in 0.5W1hr.
