Abstract
PURPOSE: To obtain shavings of high grade from a piece of dried fish meat, by treating the piece of the dried fish meat with high frequency waves, softening the piece of the dried fish meat, and shaving the softened piece of the fish meat.
CONSTITUTION: The temperature of a piece of dried fish meat, e.g. dried oceanic bonito, horse mackerel, sardine or mackerel, must be kept at 40°C or above for imparting the softness enough to facilitate the subsequent shaving step of the dried fish meat. On the other hand, the temperature of the piece of the dried fish meat over 105°C causes the disappearance of flavor and the deterioration in savor and damages the appearance due to the foaming.
