Abstract

PURPOSE: To provide a substitute for white tangle sheet having excellent water- retainability, useful for preventing the drying and deterioration of sliced fish meat for the topping of Osaka-style pressed "sushi", and consisting of a thin sheet composed of a water-insoluble coagulate obtained by exchanging the metallic ions of a solution of a water-soluble alginic acid salt with bi- or more-valent metal ions.
CONSTITUTION: An aqueous solution containing 0.3W10wt% of a water-soluble alginic acid salt (e.g. sodium alginate) is added with about 0.5W2.0wt% of tangle powder and 0.3W2.0wt% of starch powder. The solution is cast, e.g. on a belt to form a sheet having a thickness of about 0.5W2.0mm. The formed viscous solution is made to contact with a solution of a bi- or more-valent metal salt other than Mg and Hg (e.g. aqueous solution of CaCl2) to effect the exchange of the metallic ion of the alginic acid salt with the bi- or more-valent metal ion. The insolubilized alginate solution is formed to a sheet having uniform thickness, seasoned with seasonings such as acetic acid, and packed as the water-containing state without drying to obtain the objective substitute for white tangle sheet.
