Abstract

PURPOSE: To prepare an N-carbamoyl-D-α-amino acid from a 5-substituted hydantoin, by the use of hydantoinase derived from microorganisms belonging to Bacillus genus.
CONSTITUTION: Microorganism belonging to Bacillus genus and capable of asymmetrically opening and hydrolyzing hydantoin ring, e.g. Bacillus sp. AKU-0242 (FERM-P No.5214) is cultured in an alkaline medium having a pH value of 8.5W 12.0. The cultured bacterial cells, treated cells, or the enzyme extracted from said cells, are reacted with the DL- or L-isomer of a 5-substituted hydantoin of formula I (R is alkyl, aralkyl, heterocyclic group, aromatic hydrocarbon group, etc.) to obtain the N-carbamoyl-D-α-amino acid of formula II (R is the same as defined above).
