Abstract
PURPOSE: To remove a microorganism with a sediment component produced in heating (firing), by filtering a deposited soy sauce sediment produced in heating through a hollow polyvinyl alcohol membrane having micropores of an average pore diameter 0.01W0.5μ.
CONSTITUTION: A deposited sediment produced by heating (firing) a raw soy is filtered through a porous hollow polyvinyl alcohol membrane having micropores of an average pore diameter 0.01W0.5μ, and the porous hollow membrane is washed and regenerated with hot water at 40W100°C. The porous hollow polyvinyl alcohol membrane has a microporous structure of an average pore diameter 0.01W0.5μ, and a hollow fiber having an outside diameter of 500W3,000μ and a membrane thickness of 50W500μ may be used as the membrane. The porous hollow membrane after the filtration can be regenerated readily by washing with hot water at 40W 100°C and sterilized with hot water, more preferably at about 60°C.
