Abstract
PURPOSE: To prevent a packed rice cake from getting moldy and to suppress the occurrence of hollow on the outer surfaces after packaging by distributing prepared hot rice cake to a container, followed by heat sealing and thermal sterilization.
CONSTITUTION: The prepared hot rice cake 31 is divided into given amounts and put in the light-gage containers 12 having flat round shape with the rice meal 32, etc. attached to the surfaces of the rice cake. The container 12 are made of a thermoplastic synthetic resin. The mouth parts of the container 12 is then covered with the film 17 for making top, and the prepared hot rice cake 31 is filled in the container 12 by the press tool 24. The edge part 13 of the container 12 is heat-sealed for several times. Thermal sterilization is carried out while the container 12 being inserted in the treating board 27 with the insert hole 28, the containers is cooled, and taken out from the treating board 27. The above-mentioned method can provide securely airtightly sealed condition. Since sterilization is done after air-tight sealing, the rottenness and the occurrence of mold of the packed rice cake can be prevented, and rice cake with good appearance without any hollow on its outer surface, which depends on the shape of the containers, can be obtained.
