Abstract
PURPOSE: Phytin-free, defatted rice bran is ground in an aqueous alkali and fibrous matter is removed from the ground product and then, the remaining liquid is treated with an acid to precipitate protein, whereby high-quality protein is produced on industrial production scale.
CONSTITUTION: Phytin is removed from defatted rice bran by use of a dilute acid and the resultant rice bran is ground in an aqueous alkali. The fibrous matter is separated from the ground product and the remaining liquid is treated with an acid to precipitate protein, which is collected. For example, 72kg of phytin-free, defatted rice bran are combined with 107kg of water and 6kg of 10% sodium hydroxide and they are ground by passing through a colloid mill to form a slurry of pH8.5. The slurry is passed through a decanter to separate into the protein suspension and the residue. A 10% hydrochloric acid, 2.4kg, is added to the protein suspension, 431kg to adjust the pH to 4 and precipitate the protein in decanter. The pasty protein, 26kg is neutralized, washed with water and dried to give 5.5kg of said food material of protein.
