Abstract

PURPOSE: Frozen black current of frozen blueberry is thawed at low temperature or kept at low temperature after water addition to produce fruit juice of very low viscosity.
CONSTITUTION: Frozen black current or blue berry is gradually thawed at low temperature and after completion of thawing, water is added thereto by 0.2W0.5pts. per 1pt. of the fruits. Then, they are kept at low temperature, preferably lower than 70°C for longer than 1hr. Or the same amount of water is added to the fruits and the thawing is effected at low temperature. The thawed fruits is crushed together with the water with a chopper and squeezed with a press.
