Abstract

PURPOSE: To prepare a can of oysters boiled in hot water, by preheating raw oysters in a short time, packing them in a can, adding flavoring to them, seaming the can conventionally, and sterilizing it by hot-water rotary retort method.
CONSTITUTION: Raw oysters washed with salt water are preheated by boiling or steaming. The ingredients are packed in a can, to which a flavoring consisting of sodium succinate and sodium glutamate is added. The can is seamed conventionally and sterilized by hot-water rotary retort method.
