Abstract

PURPOSE: To improve the tasting quality of a creaming powder, by adding a dipeptide sweetening agent and a tasting component such as sodium glutamate to the creaming powder.
CONSTITUTION: 0.3W10wt% dipeptide sweetening agent and 10wt% or less sodium glutamate or a tasting component in an amount to give the same tasting power as 10wt% or less sodium glutamate are added to a creaming powder. Methyl or ethyl ester of α-L-aspartyl-L-phenylalanine, etc. may be cited as the dipeptide sweetening agent. Sodium aspartate, sodium inosinate, etc. as well as the sodium glutamate are used as the tasting component. If the amount of the dipeptide sweetening agent added is less than 0.3wt%, the effect cannot be produced because of too low sweetness. If the amount is more than 10wt%, the sweetness is too strong and undesirable.
