PURPOSE: Vegetable fibrous substances are hydrolyzed using a combination of cellulase and β-glucosidase, thus industrially producing saccharide solutions from vegetable fibrous substances in high yield and high efficiency.
CONSTITUTION: When vegetable fibrous substances are hydrolyzed with cellulase or its preparation to produce monosaccharides, a product or preparation containing β-glucosidase is combined. As the cellulase, is used a product containing the enzyme originating from microorganisms in Trichloderma or Humicola or another product or preparation containing the enzyme originating from microorganisms in Humicola and as β-glucosidase, is used a product or preparation containing the enzyme originating from microorganisms in Mucor. The enzyme reaction is preferably conducted at 4W8pH and 40W70°C. One of microorganisms producing β-glucosidase used in the present invention is Mucor miehei YH-10 (FERM-5428).
