Abstract

PURPOSE: A sweetening agent having a taste equal to or better than sucrose usable even in the case where the intake of sucrose is limited, by incorporating a fructose liquid having a specific furctose equivalent or more with a natural glycoside sweetening agent homogeneously.
CONSTITUTION: A solution of invert or isomerized sugar is treated with a specific solid adsorbent, e.g. zeolite, to give a fructose liquid having a fructose equivalent (FE) ≥ about 80, preferably 80W95. The liquid is then incorporated with a natural glycoside sweetening agent (S) homogeneously to give the desired liquid sweetening agent with the S content ≤10%. Glycyrrhizin or stevioside is preferably used as S. The addition of S prevents the degrading of the degree of the sweetness.
