Abstract

PURPOSE: A saccharide composition that contains maltose as the major component and has a specified saccharide constitution is used as a sweeteneing to produce a candy having low sweetness, mild flavor, high moisture-absorbing resistance and high transparency.
CONSTITUTION: A saccharide solution that contains 40W75, preferably 50W70% of maltose, 0.5W10, preferably 0.5W3% of cyclodextrin and 20W50, preferably 25W 40% of oligosaccharide, i.e., a dextrin including 3 or more glucose units and showing no iodine-coloring reaction, based on the solid components, and is adjusted to less than 5% in the glucose content is used as a sweetening to produce a candy by a usual method.
