Abstract

PURPOSE: Processed food 'Chinmi', literally means food of delicate flavor and is made from fish, shell and meat, is coated, baked, and seasoned, thus producing flavorous, tasty, nutritious and highly storable baked confection.
CONSTITUTION: Processed food Chinmi made from fish, shell, meat and poultry is cut into small lumps and, when necessary, a plasticizer as starch is added to form lumps of the core material. They are coated with a mixture of waxy alpha, wheat flour, Kanbaiko (a grade of rice flour), and sugar liquid in a rotating bowl and then formed into balls. They are stood for a while or dried in a hot-air drier kept at 30W 50°C to 10W17% water content and baked at 180W220°C. Then, the roasted product is coated with a paste that is appropriately composed of starch, table salt, sugar, flavor and dried with the remaining heat or with hot air at 30W50°C.
