Description
Claims (1)
- 【特許請求の範囲】 1.86−95%の液状油及び5−14%のハードストックを本質的に含み、当 該ハードストックは、25−65%(好ましくは35−55%)の未硬化ラウリ ン脂ステアリンと75−35%(好ましくは65−45%)の未硬化C16+脂ス テアリンとがエステル交換された混合物のステアリン画分であるマーガリン脂ブ レンド。 2.混合物が、転化率80%超、好ましくは90%超、より好ましくは95%超 で酵素的エステル交換がなされている、請求項1に従う脂ブレンド。 3.エステル交換された混合物が、少なくとも1回、乾式分画がなされている、 請求項1−2に従う脂ブレンド。 4.C16+脂ステアリンが、C16+脂を多段逆流乾式分画することによって得られ ている、請求項1−3に従う脂ブレンド。 5.エステル交換された混合物が、溶剤分画されている、請求項1−2に従う脂 ブレンド。 6.ラウリン脂ステアリンが、15%以下、好ましくは10%以下の不飽和脂肪 酸含有量を有する、請求項1−5のいずれか1項に従う脂ブレンド。 7.C16+脂ステアリンが、20%以下、好ましくは15%以下の不飽和脂肪酸 含有量を有する、請求項1−5のいずれか1項に従う脂ブレンド。 8.最終ステアリン画分が、15%以下、好ましくは10%以下、特に好ましく は9%未満の不飽和脂肪酸含有量を有する、請求項1−7のいずれ か1項に従う脂ブレンド。 9.5−12%、好ましくは6−10%のハードストックを含む、請求項1−8 のいずれか1項に従う脂ブレンド。 10.水相と、請求項1−9のいずれか1項のマーガリン脂ブレンドを主として 含む油相を含む可塑性W/O乳化物スプレッド。 11.* 25−65%の未硬化で乾式分画されたパーム核ステアリンと、75 −35%の未硬化で乾式分画されたパーム油ステアリンとのブレンドを調製し、 * そのブレンドを、転化率が少なくとも80%となるまで、酵素的にエ ステル交換し、 * そのエステル交換された混合物を、31−42℃の分離温度で乾式分 画し、 * ステアリン画分を回収する ことを含む、請求項1−4及び6−9のいずれか1項のマーガリン脂ブレ ンドにおける使用が適切であるハードストックの調製方法。 12.N10が少なくとも89で、N20が55−87で、N30が6−35で、N35 が0−12であるオレイン画分力回収される、請求項11に係る方法。 13.調理脂又はパン焼き用脂としての、あるいは、そのような脂製品又はW/ O乳化物スプレッドの調製における、請求項12の方法に従って得られるオレイ ン画分の使用。
