ノ酸等が含まれている。キナ酸自体に抗酸化機能がある
とは考えにくいが、系内の酸化防止効果を有する成分の
抗酸化作用を助長し、プロトンを与えて賦活させる相乗
効果が報告されている。一方、糖類は一般に、食品加工
工程中の香気成分保持に寄与していることよく知られた
事実である。従って、コーヒー加水分解抽出物中に含ま
