In the above-mentioned conventional example,
The method of burning the gas to cook the fried food has a problem of treating exhaust gas. That is, if exhaust gas is released indoors, the working environment is deteriorated, and a large-scale exhaust facility is required to perform outdoor exhaust. Further, since a large amount of air is consumed to burn the gas, it is necessary to introduce this from the outside. Therefore, the equipment becomes large. Further, in this combustion system, when exhaust gas is released outdoors, a large amount of heat is also released together with the exhaust gas, so that there is a problem such as low thermal efficiency.

Further, the type in which the sheathed heater is thrown directly into the oil tank has a higher thermal efficiency than the gas combustion type, but since the frying oil is in direct contact with the high temperature surface of the heater, there is a drawback that the oil deteriorates quickly. . For this reason, it is necessary to frequently change the oil, which causes problems such as disposal of waste oil on the global environment and increases costs.

Furthermore, in the case of a system in which a sheathed heater is provided on the lower surface of the outer side of the oil tank for heating, the heater cannot be fixed to the lower surface of the oil tank in consideration of expansion and contraction during heating and cooling of the heater, and thus high thermal efficiency can be obtained. Absent. Also, due to the structure of the heater, the heater cannot be arranged on the entire lower surface of the oil tank, and the watt density of the heater is high. Therefore, the temperature is high in the vicinity of the heater, but the temperature is low in the position away from the heater. There are problems such as uneven temperature.

In FIG. 1, reference numeral 1 denotes a metal oil tank having a wide bottom area. The oil tank 1 has an outer bottom surface 2 formed into a substantially flat surface, and a flat heater 3 shown in FIG. 3 is attached to the entire bottom surface 2. As shown in FIG. 3, the planar heater 3 includes a heat insulating insulator 4 made of mica plate, ceramics fiber, etc. and a heat radiating insulator 5 containing aluminum nitride.
Between ferritic stainless steel foil, nickel chrome foil,
It is formed by sandwiching a foil-shaped electric heating element 6 having a high resistivity such as an iron-chrome foil. Further, the flat heater 3 has the heat radiating insulator 5 facing the outer bottom surface 2 of the oil tank 1, and the heat insulating insulator 4
A reinforcing pressing plate 7 made of stainless steel is placed on the lower side and fixed to the outer bottom surface of the oil tank 1 by a fixing jig 8 and a sliding jig 9 which will be described later. Here, when the planar heater 3 is small, one pressing plate 7 may be provided for each heater 3 as shown in FIG. As shown, one flat heater 3 is fixed with a plurality of holding plates 7. This is because when the pressing plate 7 becomes large, the temperature difference in the pressing plate 7 becomes large, and it is easy for deformation and the like to occur. The difference is reduced to reduce the deformation.

When the bottom surface of the oil tank 1 is heated, the inside of the oil tank 1 is heated by conduction, and the frying oil inside is heated. When the temperature of frying oil reaches a predetermined temperature due to continuous energization of the flat heater 3, the temperature sensor 12 detects this and sends a signal to the control device 13 to energize the flat heater 3 here. Stop. With the above operation, the temperature of the frying oil in the oil tank 1 is maintained at a predetermined temperature. On the other hand, the food material 16 passes through the frying oil on the conveyor 14 for a long time, and a fried food of uniform quality can be obtained.

Next, in this fried food cooking, when the temperatures of the respective parts are compared, since the bottom surface 2 of the oil tank 1 contains frying oil inside, the frying oil absorbs heat and the temperature rise is small.
Therefore, there is no local heating on this bottom surface and there is little thermal deformation. However, the pressing plate 7 that pushes the planar heater 3 upward rises in temperature around the central fixing jig 8 due to the heat generating portion of the planar heater 3, and the outer peripheral end is separated from the heat generating portion, so the temperature rises. Also few. Even in the heater holding plate 7, if there is a temperature difference, heat is transferred due to heat conduction, but since this kind of material uses a material having higher strength and toughness than heat conduction (for example, stainless steel), Generally, the conductivity is low. Therefore, when the shape of the holding plate 7 becomes large, the temperature difference becomes large and it becomes easy to deform. As a measure for preventing this deformation, in the present invention, the pressing plate 7 is divided and the planar heater 3 is pressed by a plurality of pressing plates 7 to reduce the temperature variation inside the pressing plate 7 and reduce the deformation.

Further, by making the vicinity of the outer peripheral end surface of the holding plate 7 and the bottom surface 2 of the oil tank 1 into a sliding jig 9 via the spring 10, the outer peripheral portion of the holding plate 7 becomes slidable up and down, and expansion is prevented. Even if it exists, it can be easily absorbed.

As described above, according to the present invention, since the frying oil in the oil tank is heated by the flat electric heater, no exhaust gas is generated as in the gas combustion, and the air supply / exhaust ducts are not required. Can be realized. Further, it is possible to improve the thermal efficiency as compared with gas combustion. In addition, the temperature of the bottom surface can be made uniform by using a plurality of flat heaters and mounting them on substantially the entire flat surface of the outer bottom surface of the oil tank.

Further, a plurality of planar heaters are used, and the holding plate is also divided into one or a plurality of plates to fix the central portion in the longitudinal direction, and a sliding structure is provided in the vicinity of the outer peripheral end portion via a spring or the like. This increases the strength of the planar heater, always presses it against the bottom of the oil tank with a uniform force, and can easily absorb the thermal expansion when the temperature rises, improving the adhesion performance of the heater without causing thermal deformation. Can ensure high thermal efficiency.
