Description of the Related Art The transesterification reaction is an important technique as a method for producing various fatty acid esters, sugar esters and steroids, including the modification of animal and vegetable oils and fats. By using lipase, which is a fat and oil hydrolase, as a catalyst for this transesterification reaction, side reactions can be suppressed and energy costs can be reduced compared to chemical reactions. Furthermore, since lipase as a catalyst is a natural product, it is safe. The advantage is that it is also high. Further, there is also an advantage that the target product can be efficiently produced due to its substrate specificity and position specificity. However, when the transesterification reaction is carried out using lipase, the reaction proceeds only under mild conditions from room temperature to about 70 ° C., and therefore, in the absence of an organic solvent, for example, a high melting point exceeding 90 ° C. It was practically impossible to transesterify the oils and fats, waxes and the like of the above using lipase. The same applies to Alcaligenes lipase, and a patent relating to ester synthesis using Lipase PL manufactured by Meito Sangyo Co., Ltd. (JP-A-62-104589).
Also in the above, the reaction is usually performed in the temperature range of 20 to 60 ° C., and the ester synthesis reaction is performed at 40 ° C. in the examples. As described above, conventionally, when transesterifying high-melting oils and waxes, etc., a means by a chemical reaction has been used, so that the reaction proceeds randomly and a desired target substance such as substrate specificity or position specificity is obtained. It was difficult to obtain a transesterification reaction product requiring high properties in high purity. On the other hand, in the transesterification reaction using lipase, 1
High temperature reaction around 00 ° C was practically impossible.

When the water content in the reaction is about 0.1% or more, as in the conventional transesterification reaction using lipase, the reactivity of the method of the present invention decreases, and diglyceride and monoglyceride are produced from triglyceride. Such side reactions are not preferable. That is, in the present invention, the water content is preferably less than 0.1% including the discontinuous state of water originally dissolved in the substrate and a small amount of free water or bound water contained in the enzyme or the immobilized enzyme. . If the water content in the system may exceed this condition, it is recommended to remove the water content of the organic raw materials and the enzyme before use.
The reaction can be performed in either a closed system or an open system, but the initial water content in the system is consumed by evaporation or hydrolysis of a part of the ester along with the reaction, and gradually decreases, but 81 ° C ~
Even if it is 1 ppm as long as the transesterification reaction proceeds in the range of 130 ° C., it is included in the range of substantially anhydrous conditions of the present invention.

This was reacted in the same manner as in Example 1 and the reaction product was analyzed. As a result, a side reaction product was generated due to hydrolysis, glyceride having a montan wax-decomposing fatty acid residue was scarcely observed, and the thermal stability of the enzyme was decreased. Comparative Example 2 Example 2 was repeated under the same conditions except that the reaction temperature in Example 2 was 50 ° C. As a result, only 15% of the long-chain dibasic acid was introduced into tributyrin.
