Abstract

PURPOSE:To obtain an active carbon additive for rice cookers which is formed by capsulating active carbon particles into a bag consisting of a transmissive sheet and is used to improve the taste of cooked rice right after cooking or to remove the smells, etc., generated at the time of cooking or when the cooked rice is preserved for a long period of time after cooking. CONSTITUTION:This active carbon additive for rice cookers is formed by capsulating the active carbon particles 5 into the bag 4 consisting of the transmissive sheet. While the sizes of the active carbon particles are not particularly limited, the particles of the grain sizes small to some extent, for example, about 10 to 30 meshes are more preferable. Any transmissive sheets are widely usable, insofar as these sheets are made of the materials allowing permeation of water and steam. Non-woven fabrics, woven fabrics, paper, etc., are usable as the transmissive sheet. However, particles are generated in the active carbon by friction between the particles with each other during use in some cases and the sheet is required to prohibit the transmission of the extremely small particles and is further required not to contain the components which elute when boilied. The sheet including the non-woven fabric consisting of ultra-fine fibers, for example, melt blow fibers, of a fiber diameter of about <=0.1 denier is more preferable as the transmissive sheet.

[Means for Solving Problems] The present inventor considers that recently, foreign rice has been used as a staple food,
Focusing on the peculiar properties of activated carbon, we studied the method of improving the taste of rice by using activated carbon during cooking or removing the odor generated at that time. As a result, it was found that when rice is cooked directly with activated carbon, the cooked rice grains have a smooth surface just like sushi rice, less stickiness and better taste, and the odor generated during cooking can be removed. I got the knowledge. Further, as a result of research on a method for preventing activated carbon fine particles from being mixed with rice, the present invention has been achieved.

The activated carbon additive for a rice cooker of the present invention must contain activated carbon as a main component. The activated carbon used here generally has a large specific surface area of several 100 m 2 or more per 1 g, and can be widely used as long as it is a carbon material exhibiting high adsorptivity. The raw material for the activated carbon is usually a charcoal such as coconut shell or wood, or coal may be used, either of which may generate fine particles due to friction between the activated carbon particles during use, and it is not preferable to mix it with rice. As the coconut shell, an activated carbon having a high hardness is more preferable. Further, the activation method may be obtained by steam or carbon dioxide at a high temperature or by any method such as treatment with zinc chloride, phosphoric acid or concentrated sulfuric acid. Since the activated carbon used in the present invention comes into direct contact with rice, it needs to be purified by acid treatment, washing with water, etc. after activation of the carbon material. In particular, when chemicals such as zinc chloride, phosphoric acid and concentrated sulfuric acid are used, it is necessary to wash them thoroughly with water after the treatment to remove the chemicals.

The fibrous activated carbon is obtained mainly by carbonizing and activating the phenolic resin fiber or the regenerated cellulose fiber, and it contains almost no impurities and can remarkably increase the specific surface area as compared with ordinary activated carbon. , In some cases, it may reach over 3000m 2 / g. Furthermore, it is preferable because it has the characteristics of a thin fiber, a large surface area, and a high adsorption rate.

The shape of the activated carbon can be selected from any of granular carbon, crushed carbon, granulated carbon and granular carbon, and can be appropriately selected according to the mode of use of the activated carbon additive. Activated carbon can be used by enclosing it in a bag of a water permeable sheet, or can be used by being contained in the sheet. In that case, granular carbon having a small particle size is preferable. Further, when a binder is added to activated carbon to form a rectangular parallelepiped, a cylindrical shape, a disk shape, or another shape for use, granular coal or crushed coal is preferable.

Activated carbon is a unique substance having extremely excellent adsorptivity as a non-polar adsorbent, and it is known that it exhibits high adsorptivity for almost all gaseous or liquid substances, but it also has various other unique properties. By adding activated carbon directly to the washed rice and cooking it together, the cooked rice grains have a surface that is just like sushi rice, and the surface is less sticky and the taste is better. Is recognized. It is sensory recognized that this effect is much larger than that of ordinary charcoal, so it is considered that the specific surface area of the carbon material was significantly increased by the activation treatment, but the details of the effect of activated carbon on rice during cooking are as follows. Not clear.

The activated carbon additive for a rice cooker of the present invention can be used by enclosing activated carbon particles in a bag of a water permeable sheet. The size of the activated carbon particles is not particularly limited, but in the present embodiment, particles having a certain small particle size, for example, about 10 to 30 mesh are preferable. Further, in this case, the fibrous activated carbon may be enclosed in a bag in the shape of a web and used.

The permeable sheet can be widely used as long as it can transmit water and water vapor, and non-woven fabric, woven fabric, paper and the like can be used. However, activated carbon may generate fine particles due to friction between particles during use, and these particles include those having an extremely small particle size. Since it is not preferable that the activated carbon particles are mixed in the rice, it is necessary to prevent even very small particles from passing through. Furthermore, it is necessary that these permeable sheets do not contain a component that is eluted even when boiled. From these points, the permeable sheet enclosing the activated carbon particles is more preferably a sheet containing a nonwoven fabric made of ultrafine fibers having a fiber diameter of 0.1 denier or less, for example, meltblown fibers.

As another embodiment of the activated carbon additive for a rice cooker of the present invention, activated carbon particles can be contained in a sheet-shaped substrate for use. The sheet-shaped substrate is not particularly limited to woven fabric,
Nonwoven fabrics, knits, foamed sheets, etc. can be used, but they must be materials that do not contain components that elute when cooked with rice. The size of the activated carbon particles is not particularly limited, but in the present embodiment, since the activated carbon particles are used by being supported by a stretchable sheet, in order to prevent the particles from falling off, particles having a relatively small particle size such as 10 are used. About 30 mesh is preferable.

The method of supporting the activated carbon particles on the sheet is not particularly limited, but the particles can be adhered by a binder, for example. Since the binder needs to be a material that does not contain components that elute when rice is cooked with rice, for example, a powder of thermoplastic resin is applied to the surface of the sheet, and the activated carbon particles are evenly dispersed on the sheet surface. It can be fused to a sheet. At this time, if a composite fiber sheet having a high melting point core and a low melting point sheath is used and a resin powder having the same component as the sheath is used as a binder, the activated carbon particles can be more firmly fused to the sheet.

The felt containing fibrous activated carbon can be obtained by adding a binder to a web of fibrous activated carbon, mixing them, and enveloping and adhering the fibers. The binder is preferably a composite fiber consisting of a core with a high melting point and a sheath with a low melting point, and after uniformly mixing staple-core-sheath fibers into a web of fibrous activated carbon, the melting point of the core component is almost the same as the melting point of the sheath component. By treating at a lower temperature, the contact points of the fibrous activated carbon and the core-sheath fibers are fused and the felt is formed. When the above heat-fusible core-sheath fibers are used as the binder, a highly flexible felt can be obtained, and the core-sheath fibers also have a function as a reinforcing material of the felt, so that the mechanical properties are improved.
In addition, as the binder, it is also possible to use the thermoplastic powders such as those mentioned above for the activated carbon particle compact.

The molded product containing the fibrous activated carbon is a composite fiber composed of a core having a high melting point and a sheath having a low melting point as a binder in the web of the fibrous activated carbon, or the thermoplastic resin as in the case of the above-mentioned molded product of activated carbon particles. It is molded by mixing powders and fusing to activated fibrous carbon by heat treatment. The shape of the molded body may be a rectangular parallelepiped, a cylindrical shape, a disk shape, or any other shape. The molded product containing fibrous activated carbon can be imparted with a certain degree of flexibility by the property or composition of the binder. A molded product having flexibility is easier to adapt to a rice cooker than a molded product having high rigidity and is preferable as an additive.
