Abstract

PURPOSE:To provide the liqueur having a good taste and using Corchorus olitorius containing large amounts of various minerals and vitamins consisting mainly of carotene as a raw material, and to provide the method for producing the same. CONSTITUTION:Dry Corchorus olitorius is used for the improvement of the productivity to provide delicious three different kinds of liqueurs having light, dry and aromatic tastes respectively due to the difference of drying methods.

ルコール材料の選択、混合比率および熟成の技法など幾
多の問題点があった。

【問題点を解決するための手段】モロヘイヤの含有する

ロヘイヤの生の葉茎をより細かく裁断し、その混合比率

腐敗を生じるので、生産のスケジュール化に多大の煩雑
さがあった。そこで該モロヘイヤ生葉茎を以下の各種の
乾燥方法にて、乾燥モロヘイヤ葉茎として原料化をはか
った。生の葉茎をよく水洗した後で、乾燥方法としては
以下の3種を行った(1)凍結乾燥(いわゆるフリージ
ングドライである)(2)自然乾燥 (3)遠赤外線乾
燥である。各々の乾燥条件の大略を以下に記す。凍結乾
燥条件は温度約−0.5 〔℃〕乃至0〔℃〕とし気圧は0.
3 乃至1.0[mmHg] で乾燥時間は3乃至10時間である。
自然乾燥条件は陰干しにて送風機で風を送りながら約一
週間乾燥させた。遠赤外線乾燥の場合は、遠赤外線乾燥
炉中で温度を約50〔℃〕として1乃至3時間の乾燥を
行った。各乾燥方法とも重量にして約1/3(乾燥後重
量約30%)を目度に行う。出来上った各種乾燥モロヘ
イヤ葉茎(以後は単に乾燥モロヘイヤとのみ記載する)
を約1乃至2〔cm] の長さに裁断のうえ、原料として供
給する。原料用アルコールとしてはアルコール度20%
以上の焼酎甲類または焼酎乙類を使用する。アルコール
度が20%以上あれば、熟成期間中少々の手違または腐
敗要因が生じても全体的な劣化にいたる確率が少くない
からである。各種乾燥モロヘイヤをそれぞれ、所定の重
量比になるよう熟成槽に入れて、原料アルコールをそそ
ぎ込み2週間乃至1ケ月の間室温にて熟成させる。その
間、日に10分間程度櫂を入れて攪拌する。前記載の期
間寝かせたのちに、濾布にて濾過して、瓶詰して製品化
することを特徴とする製造方法を提供することによって
問題点を解決しようとするものである。

で各容器よりサンプリングして10人の成年男子に試飲
させたところ、以下のごとき評価を得た。10日迄のも
のは特徴ある味の発現が薄かった。また、20日後と3
0日後のものではさして差異が認められなかった。以上
30日のサンプルを中心に、10人の平均的な意見を取
って、この凍結乾燥モロヘイヤ酒の味および色彩を表現
すれば第(2)表となる。

総合すれば、自然乾燥モロヘイヤ酒の味と色彩は第
(3)表となる。

あった。よって30日経過のサンプルで10人の平均的
な評価を統括すれば、遠赤外線乾燥モロヘイヤ酒の味と
色彩は第(4)表となる。

の袋に入れて、各々1[l] の前実施例と同様の原料用焼
酎に沈積させて、容器に栓した上で、30日間熟成させ
た。容器を日に1回振盪させた。上記熟成後、味覚検査
をした、10人の平均的な意見は下記のものであった。 (1) 遠赤外線乾燥──赤黄色のねばりのある香ばしい
味。 (2) 自然乾燥 ──赤黄色のねばりのある甘口。 (3) 凍結乾燥 ──薄緑のとろりとした辛口。 なお、本発明によって得た各モロヘイヤ酒は通常、スト
レートで飲用する以外に飲み手の好みに合はせて、オン
ザロック、水割り、炭酸割り等によって用いられるが、
特にお湯割りにおいて各々の特長をいかんなく発揮する
との評価も得た。また続けて飲用した成年男子よりは便
通がよくなり軟便の傾向となったとの報告も受けた。
