本発明は、スパむス及び又はハヌブの抜出物
の補造方法に関し、飲料に配合した際、補品䟡倀
を著るしく悪化させる混濁もしくは沈柱物の圢成
を防止できるスパむス及び又はハヌブ抜出物の
補造方法に関する。 曎に詳しくは、本願発明は、含氎−氎混和性有
機溶媒でスパむス及び又はハヌブを抜出し、埗
られる抜出物に氎溶性動怍物性蛋癜質を添加し、
圢成される凝集物を陀去するこずを特城ずするス
パむス及び又はハヌブ抜出物の補造方法に関す
る。 果汁や果実抜出物などに代衚される怍物材料の
氎性抜出物には、ペクチン、タンニン等が含有さ
れ、これら抜出物は時間の経過ず共に混濁を生
じ、曎に沈柱を圢成するこずは良く知られおい
る。 かかる䞍郜合を防止する方法ずしおは、䟋えば
果汁などをペクチン分解酵玠で凊理しお、予めペ
クチンを分解陀去し、曎にれラチンを添加しおタ
ンニン、ペクチン類ず反応させ、圢成される凝集
沈柱物を取り陀く方法が䞀般的に採甚されおい

むス及び又はハヌブ抜出物ずの盞互反応による
混濁及び又は沈柱物の圢成は避け難く、これを
解決するこずは䞻芁な改善課題であ぀た。 しかしながら、倩然源の耇雑な抜出物組成を有
するスパむス及び又はハヌブ抜出物ず䞊蚘の劂
き諞原材料ずの極めお倚皮に及ぶ倚成分系におけ
る各成分間の耇雑な盞互䜜甚及びこれら䜜甚間の
耇雑な䜜甚バランスは党く䞍明であ぀お、埓぀
