存性飲食品においても、経時的風味低下が商品価値の低
下を招く例が多いことはいうまでもない。

β−ガラクトシル転移反応を生じさせることにより製造
することができる。乳糖をβ−ガラクトシダーゼで処理
すると、ガラクトオリゴ糖の外に未反応の乳糖、および
加水分解反応で生じたグルコースとガラクトースを含む
糖混合物が得られるが、乳糖、グルコースおよびガラク
トースは、いずれも甘味度が低く、まj;甘味の質もく
せの無い温和なものであるから、これらを随伴する粗製
ガラクトオリゴ糖を本発明の甘味料に用いても本発明の
目的達成に支障はない。

以下、実施例を示して本発明を説明する。なお、実施例
で用いたガラクトオリゴ糖は、特公昭58−20266
号公報実施例lの方法に準じて、アスペルギルス・オリ
ゼのβ−ガラクトシダーゼをラクトースに作用させ、さ
らに精製することにより製造されたものであって、その
ガラクトオリゴ糖含有率は99%以上である。
