<3>カレーソースの作製
作製したカレールウ100質量部に対して食塩10質量部、糖類10質量部、水800質量部を加え撹拌しながら10分間煮立たせ、カレーソースを作製した。

評価基準
◎:ロウ臭が無く、口溶けが極めて良好である。
○:ロウ臭が少なく、口溶けが良好である。
△:ロウ臭が少しあり、口溶けがやや不良である。
×:ロウ臭が強く、不良である。

表3に示したように、最大鎖長差が4以上であるトリグリセリドを40%以上含有する実施例1~8は、動物油脂に対して即席調理食品用油脂組成物を43質量%配合したところ、カレールウ表面の白色化および喫食時のロウ臭が抑制されていることが確認された。さらに、35℃における30分後の等温結晶化SFCが4%以上、トリグリセリドの構成脂肪酸中にベヘン酸を0.03~1.5%含有する実施例4~8は、白色化およびロウ臭の抑制効果が顕著であることが確認された。 As shown in Table 3, Examples 1 to 8 containing 40% or more of triglycerides with a maximum chain length difference of 4 or more are those in which 43% by mass of the oil and fat composition for instant cooking food was blended with the animal fat and oil.
