[ビールテイスト飲料の製造]
次に示すカラメル及び黄色成分(キハダ抽出物、ベニバナ黄色素)を準備した。
・カラメルI類(池田糖化工業株式会社製)
・キハダ抽出物
・ベニバナ黄色素(商品名:サンエローNo.2SFU、三栄源エフ・エフ・アイ株式会社製)
ビールテイスト飲料の液の色度は、改訂BCOJビール分析法(公益財団法人日本醸造協会発行、ビール酒造組合国際技術委員会〔分析委員会〕編集、2013年増補改訂)の「8.8 色度 8.8.2 吸光度法」に記載されている方法によって測定した。
測定するビールテイスト飲料の泡サンプルは、改訂BCOJビール分析法(公益財団法人日本醸造協会発行、ビール酒造組合国際技術委員会〔分析委員会〕編集、2013年増補改訂)の「8.29 泡-NIBEM-Tを用いた泡持ち測定法-6.(4)泡サンプルの準備 1~8」に記載の手順と同様に調製した。
Claims (4)
- カラメルと、黄色成分と、を含有し、
前記黄色成分が、キハダ抽出物及びベニバナ黄色素からなる群より選択される少なくとも1種であり、
前記カラメルの含有量が、ビールテイスト飲料の全質量を基準として、0.015質量%以上0.05質量%以下であり、
前記黄色成分の含有量が、ビールテイスト飲料の全質量を基準として、0.004質量%以上0.05質量%以下であり、
苦味価が5未満である、ビールテイスト飲料。 - 液の色度が9未満である、請求項1に記載のビールテイスト飲料。
- 液の色度に対する泡のa*値の比が、-0.31以上0.17未満である、請求項1又は2に記載のビールテイスト飲料。
- 前記カラメルの質量に対する前記黄色成分の質量の比が9/1超1/6以下である、請求項1~3のいずれか一項に記載のビールテイスト飲料。
