Abstract
Description
〔1〕植物微粒子と植物油脂とを含む油脂組成物に、植物由来の乾燥食品が包埋されてなる食品油脂混合物であって、
前記植物微粒子の平均粒径が0.3μm以上30μm以下であり、
前記植物油脂が20℃で流動性を有し、
前記油脂組成物における前記植物微粒子の重量比が10質量%以上80質量%以下である、食品油脂混合物。
〔2〕前記食品油脂混合物における前記乾燥食品の重量比が20質量%以上80質量%以下である、〔1〕記載の食品油脂混合物。
〔3〕前記食品油脂混合物における前記乾燥食品の体積比が25容量%以上65容量%以下である、〔1〕又は〔2〕記載の食品油脂混合物。
〔4〕前記植物微粒子と植物油脂とを含む油脂組成物が、植物の乾燥粉末を前記植物油脂と共に湿式微細化処理してなる、〔1〕〜〔3〕のいずれかに記載の食品油脂混合物。
〔5〕前記湿式微細化処理が湿式媒体攪拌ミルによる、〔4〕記載の食品油脂混合物。
〔6〕前記植物微粒子が、穀類、イモ類、豆類、種実類、野菜類、きのこ類、香辛料及びハーブ類から選ばれる1種以上に由来する、〔1〕〜〔5〕のいずれかに記載の食品油脂混合物。

〔11〕〔1〕〜〔10〕記載の食品油脂混合物が、水分含量10質量%以上40質量%以下の糖液によって固型化されてなる、食品油脂混合固型化物。
〔12〕前記糖液が、植物由来の搾汁若しくは樹液又はこれらの精製物若しくは濃縮物から選ばれる1種以上である、〔11〕記載の食品油脂混合固型化物。
〔13〕前記植物由来の搾汁若しくは樹液、又はこれらの精製物若しくは濃縮物が、果実果汁、デーツ、サトウキビ、メープル及びハチミツから選ばれる1種以上に由来する、〔12〕記載の食品油脂混合固型化物。
〔14〕〔1〕〜〔10〕のいずれか一項に記載の食品油脂混合物の製造方法であって、前記植物微粒子と前記植物油脂とを含む油脂組成物に、前記乾燥食品を混合して包埋させることを含む方法。
〔15〕前記植物微粒子と前記植物油脂とを湿式媒体攪拌ミルにて微細化処理することにより、前記油脂組成物を調製することを更に含む、〔14〕に記載の方法。
〔16〕〔11〕〜〔13〕のいずれか一項に記載の食品油脂混合固型化物の製造方法であって、〔1〕〜〔10〕のいずれか一項に記載の食品油脂混合物に、水分含量10質量%以上40質量%以下の糖液を加えて固化することを含む方法。
〔17〕前記固化を加熱乾燥により行う、〔16〕に記載の方法。
〔18〕植物由来の乾燥食品の食感・風味を保持する方法であって、平均粒径が0.3μm以上30μm以下である植物微粒子と、20℃で流動性を有する植物油脂とを含み、前記植物微粒子の重量比が10質量%以上80質量%以下である油脂組成物に、前記乾燥食品を混合して包埋させることを含む方法。
〔19〕前記植物微粒子と前記植物油脂とを湿式媒体攪拌ミルにて微細化処理することにより、前記油脂組成物を調製することを更に含む、〔18〕に記載の方法。
〔20〕植物由来の乾燥食品の食感・風味を保持しつつ、喫食性を改善する方法であって、平均粒径が0.3μm以上30μm以下である植物微粒子と、20℃で流動性を有する植物油脂とを含み、前記植物微粒子の重量比が10質量%以上80質量%以下である油脂組成物に、前記乾燥食品を混合して包埋させた食品油脂混合物に、水分含量10質量%以上40質量%以下の糖液を加えて固化することを含む方法。
〔21〕前記植物微粒子と前記植物油脂とを湿式媒体攪拌ミルにて微細化処理することにより、前記油脂組成物を調製することを更に含む、〔20〕に記載の方法。
〔22〕前記固化を加熱乾燥により行う、〔20〕に記載の方法。

Claims (22)
- 植物微粒子と植物油脂とを含む油脂組成物に、植物由来の乾燥食品が包埋されてなる食品油脂混合物であって、
前記植物微粒子の平均粒径が0.3μm以上30μm以下であり、
前記植物油脂が20℃で流動性を有し、
前記油脂組成物における前記植物微粒子の重量比が10質量%以上80質量%以下であり、
前記植物由来の乾燥食品の重量比が20質量%以上80質量%以下であり、
前記植物由来の乾燥食品の粒子径が50μm以上20mm以下であり、
水分含量が3質量%以下である、食品油脂混合物。 - 前記食品油脂混合物における前記乾燥食品の重量比が20質量%以上60質量%以下である、請求項1記載の食品油脂混合物。
- 前記食品油脂混合物における前記乾燥食品の体積比が25容量%以上65容量%以下である、請求項1又は2記載の食品油脂混合物。
- 植物微粒子と植物油脂とを含む前記油脂組成物が、植物の乾燥粉末を前記植物油脂と共に湿式微細化処理してなる、請求項1〜3のいずれか一項に記載の食品油脂混合物。
- 前記湿式微細化処理が湿式媒体攪拌ミルによる、請求項4記載の食品油脂混合物。
- 前記植物微粒子が、穀類、イモ類、豆類、種実類、野菜類、きのこ類、香辛料及びハーブ類から選ばれる1種以上に由来する、請求項1〜5のいずれか一項に記載の食品油脂混合物。
- 前記乾燥食品が、穀類、イモ類、豆類、種実類、野菜類、果実類、きのこ類、香辛料及びハーブ類から選ばれる1種以上に由来する、請求項1〜6のいずれか一項に記載の食品油脂混合物。
- 前記食品油脂混合物における乳化剤の含有量が1質量%以下である、請求項1〜7のいずれか一項に記載の食品油脂混合物。
- 前記乾燥食品の粒子径が75μm以上20mm以下である、請求項1〜8のいずれか一項に記載の前記食品油脂混合物。
- 前記食品油脂混合物が加熱殺菌処理されていない、請求項1〜9のいずれか一項に記載の前記食品油脂混合物。
- 請求項1〜10記載の食品油脂混合物が、水分含量10質量%以上40質量%以下の糖液によって固型化されてなる、食品油脂混合固型化物。
- 前記糖液が、植物由来の搾汁若しくは樹液又はこれらの精製物若しくは濃縮物から選ばれる1種以上である、請求項11記載の食品油脂混合固型化物。
- 前記植物由来の搾汁若しくは樹液、又はこれらの精製物若しくは濃縮物が、果実果汁、デーツ、サトウキビ、メープル及びハチミツから選ばれる1種以上に由来する、請求項12記載の食品油脂混合固型化物。
- 請求項1〜10のいずれか一項に記載の食品油脂混合物の製造方法であって、前記植物微粒子と前記植物油脂とを含む油脂組成物に、前記乾燥食品を混合して包埋させることを含む方法。
- 前記植物微粒子と前記植物油脂とを湿式媒体攪拌ミルにて微細化処理することにより、前記油脂組成物を調製することを更に含む、請求項14に記載の方法。
- 請求項11〜13のいずれか一項に記載の食品油脂混合固型化物の製造方法であって、請求項1〜10のいずれか一項に記載の食品油脂混合物に、水分含量10質量%以上40質量%以下の糖液を加えて固化することを含む方法。
- 前記固化を加熱乾燥により行う、請求項16に記載の方法。
- 植物由来の乾燥食品の食感・風味を保持する方法であって、平均粒径が0.3μm以上30μm以下である植物微粒子と、20℃で流動性を有する植物油脂とを含み、前記植物微粒子の重量比が10質量%以上80質量%以下である油脂組成物に、前記乾燥食品を混合して包埋させることを含む方法。
- 前記植物微粒子と前記植物油脂とを湿式媒体攪拌ミルにて微細化処理することにより、前記油脂組成物を調製することを更に含む、請求項18に記載の方法。
- 植物由来の乾燥食品の食感・風味を保持しつつ、喫食性を改善する方法であって、平均粒径が0.3μm以上30μm以下である植物微粒子と、20℃で流動性を有する植物油脂とを含み、前記植物微粒子の重量比が10質量%以上80質量%以下である油脂組成物に、前記乾燥食品を混合して包埋させた食品油脂混合物に、水分含量10質量%以上40質量%以下の糖液を加えて固化することを含む方法。
- 前記植物微粒子と前記植物油脂とを湿式媒体攪拌ミルにて微細化処理することにより、前記油脂組成物を調製することを更に含む、請求項20に記載の方法。
- 前記固化を加熱乾燥により行う、請求項20に記載の方法。
