Description
先ず、色々な増粘多糖類をジェットミル粉砕し、粒子のメジアン径と、その粉を粉状のままでハードキャンディに練り込んで成形し、舐めたときのとろみとざらつきについて調べてみた。増粘多糖類として、キサンタンガム、ローカストビーンガム、プルラン、カラギーナン、イオタカラギーナン、カッパカラギーナン、ペクチン、グアガム、ヒドロキシメチルセルロースを、とろみを有する蛋白質として、ゼラチン、ポリグルタミン酸、ミルクカゼインをジェットミルで粉砕し、粒子のメジアン径と、とろみの強さを調べてみたところ、この中で、キサンタンガムが最もとろみを呈する効果は高く、また、ジェットミル加工で細かくなりやすいことが分かった。次に、カラギーナンが続き、キサンタンガムとカラギーナンを併用することも有効であると考えられる(ジェットミルとしては、セイシン企業社製のA−O JET MILLを使用し、エアー圧0.6MPa、供給量0.02g/秒とした)。
砂糖500g、水飴500gを150℃まで煮詰め、120℃まで冷却し、ハーブエキス、メントール香料を練り込み、最後に、24.8μmとろみパウダー、20μmとろみパウダー、10μmとろみパウダーを0.1重量%、ならびに、0.5重量%、2.0重量%の割合で練り込み、成形したのち常温まで冷却し、とろみが有るか無いかを調べた。また、ざらつきがあるかどうか、そのざらつきが不快であるかどうかを調べた。とろみ付けは、キャンディの内部だけ、或いは、表層部だけ、或いは層状にする、パウダーを表面にまぶす、センター部に集中させる、水に溶解させるのではなく、油脂や有機溶媒に分散させてから練り込むなど、商品のコンセプトや生産設備の適性に応じて、様々な部位にとろみを付与することができるが、ここでは、キャンディ全体に練り込んでいる。

Claims (7)
- 粉状の増粘多糖類を微細な粒子に粉砕するステップであって、該増粘多糖類としてキサンタンガムを用いる、粉砕するステップと、
水溶解させることなく粉状の上記粒子のままでキャンディに配合するステップと、
最終製品形態のキャンディの内部および表層部の少なくとも一方に上記増粘多糖類を粉状で点在させるか、あるいは、層状に存在させるステップと、
を含むキャンディの製造方法において、
上記粉砕するステップにおいて、上記粒子のメジアン径が20μm以下となるまで粉砕することを特徴とする、キャンディの製造方法。 - 上記粉砕するステップにおいて、上記粒子のメジアン径が9μm〜20μmとなるまで粉砕することを特徴とする、請求項1に記載のキャンディの製造方法。
- 上記粉砕するステップにおいて、上記増粘多糖類に加えて結晶状の糖質を1重量%〜70重量%の割合で混合することをさらに含む、請求項2に記載のキャンディの製造方法。
- 上記結晶状の糖質として、グラニュー糖、キシリトール、エリスリトール、トレハロース、乳糖、粉糖、ブドウ糖および還元イソマルツロースからなる群から選択された1種または複数種を混合したものを用いることを特徴とする、請求項3に記載のキャンディの製造方法。
- 粉状の増粘多糖類を微細な粒子に粉砕するステップであって、該増粘多糖類としてキサンタンガムとカラギーナンの混合物を用いる、粉砕するステップと、
水溶解させることなく粉状の上記粒子のままでキャンディに配合するステップと、
最終製品形態のキャンディの内部および表層部の少なくとも一方に上記増粘多糖類を粉状で点在させるか、あるいは、層状に存在させるステップと、
を含むキャンディの製造方法において、
上記粉砕するステップにおいて、上記粒子のメジアン径が11.3μm以下となるまで粉砕することを特徴とする、キャンディの製造方法。 - 上記粉砕するステップにおいて、上記粒子のメジアン径が9μm〜11.3μmとなるまで粉砕することを特徴とする、請求項5に記載のキャンディの製造方法。
- 上記粉砕するステップにおいて、ジェットミルを用いて粉砕することを特徴とする、請求項1〜6のいずれかに記載のキャンディの製造方法。
