Description
1.醸造:この工程は、穀類(オオムギ、麦芽(発芽オオムギ)、コーン、コメ)を、熱水(40℃から100℃の温度の段階での)および芳香植物(ホップおよび場合により多種多様なスパイスなど)と混合することよりなる。この工程により、糖および蛋白質を穀類から抽出して麦汁(または果醪)とよばれるものを形成することができる。
2.濾過:こうして得られた果醪を濾過して、一方はいわゆる冷精製麦汁と呼ばれるものともう一方はビールかすと呼ばれる穀類の不溶性固形残渣とを得る。
3.発酵:冷精製麦汁を、FVTと呼ばれる発酵タンク(または発酵槽、通常は円筒円錐形の反応器)に導入する。酵母菌を加え、全体を6から10℃の間の温度で3から7日間漬け込む。この工程により、グルコースおよび糖がエタノールと二酸化炭素に変換される。
4.保護:発酵が終わると、混合物に3℃にて低温衝撃を与え、酵母菌および蛋白質を凝固させる。この工程は、発酵槽中または別のタンク中において行われる。こうして得られたビールは保護反応器に入れたまま熟成させ、次いで濾過される。
A)醸造反応器:水酸化ナトリウムを用いる塩基性媒体洗浄
B)有機性汚染および無機性汚染を含む発酵容器:3工程での混合洗浄
1.清水を用いる(汚染の10%が除去される)か、速い「ショット」の形態における希釈ソーダの存在下での(汚染の80から90%が除去される)の、「ワンウェイ」洗浄と呼ばれる予備洗浄(その場所での直接除去)。これにより、よりよい汚染の除去が可能になる。しかしながら、水酸化ナトリウムを大量に用いることはできない。なぜならば、発酵タンクは、減圧によるタンクの内破に関与し得る、水酸化ナトリウムと反応する可能性がある二酸化炭素を含んでいるからである。
2.リン酸(通常、リン酸56重量%の溶液の1.5容積%にて)を用いる清浄化。および
3.低含量の硫酸の殺生物剤との混合物を一緒に用いる滅菌。
現在のところ、洗浄工程2および3は、2種の異なる酸を用いる連続する仕方で行われ、それぞれ1つは1種類の汚染の除去に効果的である。
−リン酸は酵母菌リングを除去するのに用いられる。
−硫酸はビール石を除去するのに用いられる。リン酸はこの種の汚染(シュウ酸カルシウム)に関して効果がない。しかしながら、硫酸の腐食能力のため、その使用は不利な点なしではない。しかし、この腐食作用は、低温における作業の間は、緩和され得る。
C)保護:この現実の工程では、汚染は発酵槽よりも少なく、特に酵母菌リングは殆どまたは全くない。したがって、通常、水により簡単に清浄化し、続いて上記のように硫酸+殺生物剤混合物により清浄化する。
a)場合により設備の予備洗浄工程、
b)少なくとも1種のアルカンスルホン酸を含む配合物の有効量の前記設備中における循環による前記設備の洗浄工程、および
c)すすぎ溶液の循環による前記設備のすすぎ工程
を含む。
a)発酵の間の標準的な汚染作成工程:
胴が74cm×18cmのおよびコーン長さが17cmの、ステンレス鋼(容積316L)製円柱円錐タンクに、周囲温度(15℃から25℃の間)にて、醸造用精製冷麦汁5Lを導入する。
水酸化ナトリウムの1.5%アルカリ溶液の3回5秒間の循環、各循環の間の5分間の休止により、予備洗浄を行う。
汚染の清浄化を、安定な制御された流体力学的条件下、タンクの上部の位置に固定されたスプリンクラー・ボール(Hacke Mark、標準型M1−1DN8)を用いて、清浄化配合物を循環させて行う。より詳細には、循環は1400L/分に設定し、スプリンクラーの圧は0.2相対バール(1.2絶対バール)にて、溶液は汚染が完全に消失するまで周囲温度(℃から25℃の間)に維持される。タンク中の汚染の消失を目で点検するために、5分ごとに循環を止める。清浄化は目視で評価し、明らかにきれいなタンクを得るために必要な時間をこれにより設定する。
参照配合物A:56重量%リン酸(H3PO4)の水溶液(d=1.38、すなわち純H3PO41.15重量%)。
配合物1(比較):ギ酸55%水溶液(d=1.195すなわち純ギ酸0.98重量%)。
配合物2(本発明によるもの):70重量%メタンスルホン酸の1容積%水溶液(d=1.35、すなわち純メタンスルホン酸0.94重量%)。
「Brewferm」(コムギベースの白ビール)の名で販売されている市販のビール調製用キットを希釈して再構成麦汁を得る。
ビール石の2つの代表的な試料を醸造中の発酵タンクに集めて、以下の実験に供する。
−堆積物約0.5グラムを、空気を用いて40℃にて24時間事前に乾燥させて正確に秤量する。
−振盪せずに、周囲温度(15℃から25℃の間)で4時間、試験配合物に浸漬する。
−溶液を濾過して不溶性固体を回収する。
参照配合物A;56重量%リン酸(H3PO4)の水溶液(d=1.38、すなわち純H3PO41.15重量%)。
参照配合物B:78%硫酸(H2SO4)(密度=1.7、すなわち1.32重量%の純度)。
配合物1(比較):ギ酸55%水溶液(d=1.195すなわち純ギ酸0.98重量%)。
配合物2(本発明によるもの):70重量%メタンスルホン酸の1容積%水溶液(d=1.35、すなわち純メタンスルホン酸0.94重量%)。
シュウ酸カルシウム(6g)を、70℃で24時間、一方はメタンスルホン酸溶液100g(4g/Lおよび12g/L)に加え、もう一方はリン酸溶液100g(4g/Lおよび12g/L)に加える。
Claims (7)
- a)設備の予備洗浄工程、
b)清浄化酸成分としてメタンスルホン酸のみを含む配合物の有効量の前記設備中における循環による前記設備に存在するビール石および酵母リングの両方の清浄化工程であって、前記配合物が、0.1から5重量%のメタンスルホン酸を含むもの、および
c)すすぎ溶液の循環による前記設備のすすぎ工程
を含む、ビールの調製および貯蔵に用いられる設備に存在するビール石および酵母リングの両方の清浄化方法。 - 前記設備が、タンク、容器、樽、発酵槽、液抜き管、弁、瓶およびビール缶から選択される1つ以上の構成要素を含む、請求項1に記載の方法。
- 予備洗浄工程が、水酸化ナトリウムまたは水酸化カリウムの水性溶液により行われる、請求項1または2に記載の方法。
- 前記配合物が、レオロジー添加剤、溶媒、殺生物剤、質感剤、共溶媒、増粘剤、発泡剤、消泡剤およびこれらの混合物からなる群から選択される添加剤をさらに含む、請求項1から3のいずれか一項に記載の方法。
- 前記配合物による前記清浄化が、発酵槽、貯蔵容器またはビールに用いられる準備容器(樽、瓶またはビール缶)内で行われ、前記清浄化が発酵槽または貯蔵容器においては、0℃から100℃の範囲の温度にて、ビールに用いられる準備容器(樽、瓶またはビール缶)においては、60℃から80℃の範囲の温度にて行われる、請求項1から4のいずれか一項に記載の方法。
- a)希アルカリ溶液を用いる前記設備の予備洗浄工程、
b)清浄化酸成分としてメタンスルホン酸のみを含む配合物の前記設備中における循環による前記設備の洗浄工程であって、前記配合物が、0.1から5重量%のメタンスルホン酸を含むもの、および
c)水の循環による前記設備のすすぎ工程、
を含む、ビールの調製に用いられる設備を清浄化するための、請求項1から5のいずれか一項に記載の方法。 - ビールの調製および/または貯蔵/保存に使用される設備において清浄化酸成分としてメタンスルホン酸のみを含む配合物であって、前記配合物が、0.1から5重量%のメタンスルホン酸を含むものを循環させることによる、ビールの調製および/または貯蔵/保存の間に形成されるビール石および酵母リングを除去するための、前記配合物の使用方法。
