Abstract
【解決手段】ルチン濃度が70〜1100 ppmの範囲であり、且つ、(A)ルチンと(B)ケルセチンの重量比率[(A)/(B)]が3.7〜58.0であることを特徴とする、容器詰高濃度ルチン含有飲料を提供する。

Description
本発明の容器詰高濃度ルチン含有飲料は、ルチン濃度が70〜1100 ppmの範囲であり、且つ、成分(A)としてのルチンと、成分(B)としてのケルセチンの重量比率[(A)/(B)]が3.7〜58.0であることを特徴とするものである。
ソバ茶を用い、ルチン濃度とルチン/ケルセチン重量比を変動させ、沈殿の発生の有無を観察した。
・ルチン標品 和光純薬工業製 『Rutin』
・ケルセチン標品 ナガライテスク製 『Quercetin』
・水溶性ルチン 東洋精糖製 『αGルチンPS−D』
2.試験液調整
・ルチン標準液
和光純薬工業製『Rutin』を適当な濃度になるようメスフラスコに製秤し、99%メタノールで溶解し、ルチン標準液とした。
ナガライテスク製『Quercetin』を適当な濃度になるようメスフラスコに製秤し、99%メタノールでケルセチン標準液とした。
東洋製糖製『αGルチンPS−D』を適度な濃度になるようメスフラスコに採取し、99%メタノールで溶解定容してHPLCに供した。
適度な濃度になるよう99%メタノールで希釈し、0.45μmのメンブランフィルターにてろ過を行い試験液とした。
HPLC装置 :Waters社のAQUITY UPLC
カラム :C18 2.1×100mm
カラム温度 :40℃
溶媒 :A液;アセトニトリル:水:ギ酸=5:95:0.1
B液;アセトニトリル:水:ギ酸=95:5:0.1
グラジェント :0-2min A:B=90:10→60:40
2-15min A:B=90:10→60:40
流速 :200μl/min
検出波長 :354nm
なお、試験液は2度測定を行い、平均値を求めて含量とした。
(1)ルチン
試験液中のルチン濃度(ppm)=標準液の濃度×(試験液中のモノグルコシルルチン、ルチンのピーク面積の和/標準液中のルチンのピーク面積)
(2)ケルセチン
試験液中のケルセチンの濃度(ppm)=標準液の濃度×(試験液中のケルセチンのピーク面積/標準液中のケルセチンのピーク面積)
※試験液中のルチン濃度は、試験液中のモノグルコシルルチン、ルチンの面積の和を、標準液のルチンの面積と濃度から求めた。
※標品のルチン、ケルセチン含量を100として計算した。
※水溶性ルチン液を使用し、モノグルコシルルチンのピークの確認を行った。
充填後の飲料を静置し、沈殿の発生の有無を観察した。また、飲料の香味を調べた。その結果を表1に示す。
Claims (8)
- ルチン濃度が70〜1100 ppmの範囲であり、且つ、(A)ルチンと(B)ケルセチンの重量比率[(A)/(B)]が3.7〜58.0であることを特徴とする、容器詰高濃度ルチン含有飲料。
- 前記飲料が、ソバ抽出液、茶抽出液又は柑橘類果汁を含む、請求項1に記載の飲料。
- 前記飲料がソバ茶である、請求項1に記載の飲料。
- 飲料中のルチン濃度を70〜1100 ppmの範囲に調整し、且つ、飲料中の(A)ルチンと(B)ケルセチンの重量比率[(A)/(B)]を3.7〜58.0に調整することによる、容器詰高濃度ルチン含有飲料の製造方法。
- 前記ルチンがαグルコシル化ルチンである、請求項4に記載の製造方法。
- 前記飲料が、ソバ抽出液、茶抽出液、又は柑橘類果汁から調製されることを特徴とする、請求項4又は5に記載の製造方法。
- 前記飲料がソバ抽出液から調製されることを特徴とする請求項4又は5に記載の製造方法。
- 飲料中のルチン濃度を70〜1100 ppmの範囲に調整し、且つ、飲料中の(A)ルチンと(B)ケルセチンの重量比率[(A)/(B)]を3.7〜58.0に調整することによる、容器詰高濃度ルチン含有飲料の沈殿発生の抑制方法。
