上記目的を達成するため、本発明者らは鋭意研究と実験を重ねた結果、エリンギを麺状に切断し、ブランチングした後容器に充填密封して加熱加圧殺菌すると、常温で保存が可能であり、しかも生麺と類似するさっぱりとした味覚とシコシコした歯ごたえを充分に有する容器詰麺状食品が得られることを見出し、本発明に到達した。
