Description
The present invention relates to a noodle strip rolling method and a noodle strip rolling apparatus for rolling a noodle strip (noodle strip dough) made of raw materials such as wheat flour and buckwheat when noodles, buckwheat noodles and the like are made.
In general, when making noodles, such as udon, mechanically, dough formed by mixing flour and salt water as raw materials with a mixer or the like is fed between rolling rolls, and the noodle strip is passed between the rolling rolls. The noodle strip is rolled to form a noodle strip having a predetermined thickness.
Such a mechanical rolling method is more efficient and suitable for mass production than hand-rolling using a rolling pin, but mechanically-rolled noodles are inferior in texture to hand-rolled noodles. The evaluation that there are many is common.
Therefore, the present invention has been made in view of the above conventional problems, and an object of the present invention is to improve the quality of the noodle strip to be mechanically rolled.
The present invention has been made to solve the above problems, and the noodle strip rolling method according to the present invention is a noodle strip rolling method in which a long noodle strip is rolled to form the noodle strip. A plurality of rolling units having a pair of rolling rolls to be rolled are provided on the noodle strip feed path, and the rolling rolls in the plurality of rolling units are aligned with the noodle strips loosened between the plurality of rolling units. Rolling and rolling the noodle strip in a forward direction for a fixed length, and then reversing the rolling roll to reversely roll the noodle strip in a reverse direction and repeatedly performing reciprocating rolling to roll the length shorter than the fixed length in the forward direction. It is characterized by.
In the noodle strip rolling method, in addition to the normal step of rotating the rolling roll forward to roll the noodle strip in the forward direction, the rolling roll is reversed to roll the noodle strip in the reverse direction. Therefore, the noodle band is rolled in two directions, the forward direction and the reverse direction, and rolling similar to rolling with a hand-rolled rolling pin can be performed with a rolling roll.
In addition, since the forward and reverse reciprocating rolling is repeated , the noodle band can be rolled three times in the forward direction, reverse direction, and forward direction with the same rolling roll. That is, in the conventional method of rolling only in the forward direction with the same rolling roll, the same rolling gap is passed only once, but the noodle strip has a restoring force and thus rolled in the forward direction. It can be reliably rolled later by passing it again through the same rolling roll. Moreover, since the directions are opposite, the rolling can be performed more reliably and more uniformly than the method of rolling twice in the forward direction (same direction), and the density of the noodle band can be increased. Further, since the rolling is performed three times in total in the forward direction, the reverse direction, and the forward direction, the density of the noodle strip can be further increased. Moreover, in the case of rolling twice, the supply side and the extraction side of the noodle strip are the same, but in the case of rolling a total of three times, the supply side and the extraction side are in different positions, so the work efficiency is improved. .
Further, in the noodle strip rolling method , reciprocating rolling is performed such that the noodle strip is rolled for a certain length in the forward direction, and then the rolling roll is reversed to roll the noodle strip in a reverse direction while rolling the length shorter than the certain length in the forward direction. It is set to be carried out repeatedly. That is, when performing rolling a total of three times, for example, a noodle strip having a predetermined length is once rolled over the entire length in the forward direction, then rolled over the entire length in the reverse direction, and further rolled again in the forward direction. It can also be said. However, as described above, after rolling the noodle strip for a certain length in the forward direction, reversing rolling to reverse the rolling roll and returning the noodle strip in the reverse direction while rolling the length shorter than the certain length in the forward direction is repeated. By rolling the noodle band continuously, the noodle band can be sent sequentially from the supply side to the take-out side. For example, after a cutting process with a slitter or a noodle string cutting process for cutting the noodle string every predetermined length It can be easily linked to the process.
The noodle strip rolling device according to the present invention is a noodle strip rolling device that forms a long noodle strip by rolling, and includes a plurality of rolling units including a pair of rolling rolls for rolling the noodle strip. A rotating gear provided on a feeding path of the noodle strip, and in a state in which the noodle strip is loosened between the plurality of rolling units, and a rotation gear attached to a rotation shaft of the one rolling roll so as to be integrally rotatable, A first drive gear that meshes with the rotation gear to drive and rotate the rotation gear, a second drive gear that is driven and rotated in the same direction as the first drive gear, and a rotational force from the second drive gear in the opposite direction In order to convert, a rotation gear and a reversing gear arranged between the second drive gear are provided, and the first drive gear and the second drive gear are constituted by a toothless gear, Of the toothless gear on the side that feeds out the noodle strip in the positive direction The number of teeth is larger than the number of teeth of the toothless gear on the side where the noodle band is returned in the reverse direction, and while the first drive gear is engaged with the rotary gear, the second drive gear is It is configured so that it does not mesh with the reversing gear, and the first driving gear does not mesh with the rotating gear while the second driving gear meshes with the reversing gear. Yes.
In the noodle strip rolling device configured as described above, when the first drive gear meshes with the rotation gear, for example, the rotational force of the first drive gear is transmitted to the rotation gear and one of the rolling rolls rotates in the forward rotation direction. Thus, the noodle strip is fed out for a predetermined length while being rolled. Next, after the meshing between the first driving gear and the rotating gear is released, the second driving gear meshes with the reverse gear, whereby the rotating gear is rotated in the direction opposite to the rotating direction, and one of the rolling rolls is By rotating in the reverse direction, the noodle strip is returned while being rolled by a length shorter than the length of the feeding. Then, after the meshing between the second drive gear and the reversing gear is released, the first drive gear meshes with the rotating gear again, and the noodle strip is fed out while rolling for a predetermined length as described above, and then the second drive The gear meshes with the reverse gear, and the noodle strip is returned while being rolled by a length shorter than the extended length. By repeating this, the noodle strip is removed from the supply side while continuously rolling the noodle strip. Can be sent sequentially to the side. When the rotation direction of the first drive gear and the second drive gear is opposite to the rotation direction, one rolling roll is rotated in the forward rotation direction while the second drive gear and the reverse gear are engaged. While the first drive gear is engaged with the rotating gear, one of the rolling rolls is rotated in the reverse direction.
The first drive gear and the second drive gear may be rotatably attached to the same support shaft, and the support shaft may be driven and rotated in one direction by a single electric motor.
A third drive gear having teeth formed over the entire circumference is attached to the support shaft so as to be integrally rotatable, and a power transmission gear having teeth formed over the entire circumference meshing with the third drive gear is disposed on the rotary shaft. A rotation direction of the support shaft when the first drive gear and the rotation gear mesh with each other to return the noodle band in the reverse direction between the power transmission gear and the rotation shaft. May be provided with a one-way clutch for transmitting the rotational force of the third drive gear to the rotating shaft only when the support shaft is rotated in the opposite direction. In this case, in order to rotate the rotating shaft forward and backward, even if the supporting shaft is driven and rotated in a predetermined direction, that is, when the noodle belt is returned in the reverse direction by meshing the first driving gear and the rotating gear, The rotational force of the third drive gear is not transmitted to the power transmission gear by the direction clutch. Even when the support shaft rotates in the reverse direction, the power transmission gear does not rotate, only the rotation shaft rotates relative to the power transmission gear.
The number of teeth of the toothless gear on the side of feeding the noodle band in the forward direction may be 1.5 times or more and 2 times or less than the number of teeth of the toothless gear on the side of returning the noodle band in the reverse direction.
The rotary gear may be engaged with a second rotary gear attached to the rotary shaft of the other rolling roll so as to be integrally rotatable, and both rolling rolls may be driven and rotated by the same drive system.
As described above, in the noodle strip rolling method of the present invention, the noodle strip is rolled in two directions, the forward direction and the reverse direction. It can be rolled without any problems, and the gluten structure of the noodle strip is difficult to be damaged because of gentle rolling. Also, by rolling in two directions, it is possible to prevent the noodle strip rolled in the forward path from returning to its original thickness by the restoring force, so that the density of the noodle strip is increased. As a result, the quality of the noodle band can be improved as compared with the conventional one-way rolling.
In addition, like the noodle strip rolling device of the present invention, the rotating gear can be rotated in both forward and reverse directions while rotating the first driving gear and the second driving gear in the same direction, so that the rotating gear can be rotated forward and backward. The forward / reverse control required when rotating in both forward and reverse directions with a simple electric motor can be eliminated, and not only can a highly reliable device be provided with a simple configuration, A device with high work efficiency that can perform forward / reverse rotation accurately and reliably at a constant speed without incurring problems such as a decrease in rotational speed (drop) or overrun that inevitably occurs when switching between reverse rotations. Can do. In addition, by configuring the first drive gear and the second drive gear from toothless gears, when one drive gear is engaged, the other drive gear can be disengaged, and the clutch and the like can be This is advantageous in terms of durability that can be used well over a long period of time, with no simplification of the configuration due to a malfunction of meshing, while simplifying the configuration as compared with the configuration of using and switching the meshing state.
The first drive gear and the second drive gear are rotatably attached to the same support shaft, and the support shaft is driven and rotated in one direction by a single electric motor, thereby reducing the number of parts. Not only can the cost be reduced, the apparatus can be reduced in size.
Is provided with a one-way clutch for transmitting the rotational force of the third drive gear to the rotary shaft only when the support shaft is rotated in the opposite direction, after removing the reverse gear. By rotating the support shaft in the direction opposite to the drive rotation direction for rotating the rotation shaft forward and backward, the rotation shaft is continuously rotated in the same direction (the forward direction in which the noodle band can be sent out) to perform normal rolling. Noodle strip rolling device capable of performing work It can be configured. In addition, the third drive gear and the power transmission gear are gear-linked and a one-way clutch is provided between the power transmission gear and the rotating shaft, so that both the first drive gear and the second drive gear are non-movable. It is possible to prevent the rotation timing of the rotating shaft from rotating unexpectedly when the meshing state is engaged, and the meshing timing of the first driving gear and the second driving gear to the reversing gear and the rotating gear can be avoided. Can always be performed smoothly. Also, by removing the reversing gear and rotating the support shaft in the direction opposite to the rotation direction when the reversing gear is provided, the rolling roll is continuously transmitted in the forward direction via the one-way clutch. Thus, the noodle strip rolling device can be configured to suit the intended use with a single unit.
The number of teeth of the toothless gear on the side of feeding the noodle band in the forward direction is set to 1.5 to 2 times the number of teeth of the toothless gear on the side of returning the noodle band in the reverse direction. In the process of rolling the rolled noodle strip back, the length of the noodle strip going forward in the reverse direction while avoiding the occurrence of unrolled parts on the return path Can be ensured for as long as possible, and there is an advantage that a uniformly rolled noodle strip can be obtained while the rolling operation can be performed efficiently.
Hereinafter, an embodiment of a noodle strip rolling method according to the present invention will be described with reference to the drawings.
The noodle strip rolling method in this embodiment is performed by supplying the noodle strip V to a rolling unit U composed of a pair of rolling rolls L1 and L2, as shown in FIG. A predetermined gap is formed between the two rolling rolls L1, L2, and the noodle strip V is rolled when the noodle strip V passes through the gap.
In the normal rolling method, the rotation direction of the rolling roll is also constant and is the positive direction from the supply side of the noodle strip to the take-out side. However, in the rolling method according to the present embodiment, the rolling rolls L1 and L2 are set halfway. It is reversed.
In general, the pair of rolling rolls L1 and L2 uses a single motor (not shown) as a drive source, and the rotation of the motor is controlled. However, the rotation of the motor is switched between forward and reverse. That is, when the rotation direction shown in FIG. 1A is the forward direction, rolling is performed in the forward direction for a predetermined length (predetermined time), and then the rotation of the motor is reversed as shown in FIG. 1B. The rolls L1 and L2 are reversed and rolled while feeding the noodle strip V in the reverse direction. Further, the motor is reversed again, the rolling rolls L1 and L2 are returned in the forward direction, and rolling is performed while feeding the noodle band V in the forward direction as shown in FIG.
Thus, the noodle strip V is rolled a total of three times with the same rolling rolls L1 and L2 by switching the rotation direction of the same rolling rolls L1 and L2 between forward and reverse. Moreover, it is not rolled a plurality of times in the same direction, but is rolled a plurality of times in two directions, the forward direction and the reverse direction.
In addition, after the noodle strip V having a relatively short length is once rolled in the forward direction over the entire length, it is rolled over the entire length in the reverse direction, or further rolled over the entire length in the forward direction again. However, when the long noodle strip V is continuously rolled, it is as follows. That is, after rolling the noodle strip V in the forward direction for a certain length, the rolling rolls L1, L2 are reversed and the noodle strip V is returned in the reverse direction, and then rolled for a length shorter than the certain length in the forward direction. Then, the noodle strip V is continuously rolled while repeating such reciprocating rolling, and the noodle strip is gradually sent to the downstream side. For example, after the rolling rolls L1 and L2 are rotated forward by a predetermined angle, the cycle of rotating the rolling rolls L1 and L2 by half the forward rotation is repeated.
In addition, it is preferable to use what used the rolls L1 and L2 which gave the fluororesin coat | court to the surface, and the surface which carried out uneven | corrugated processing by shot blast. By using them, a scraper (scratch) becomes unnecessary.
As described above, unlike the conventional method in which the noodle strip V is rolled only in the forward direction, it is mechanical rolling using the rolling rolls L1 and L2 by rolling the noodle strip V in two directions opposite to the forward direction. However, rolling similar to rolling with a hand-rolled rolling pin can be performed. Then, the noodle band V can be rolled without difficulty in the direction opposite to the normal direction, and since the rolling is gentler than in the case of only the normal direction, there is an advantage that the gluten structure of the noodle band V is hardly damaged. Further, in the case of rolling only in the forward direction, the gluten structure can be easily oriented, but rolling in the reverse direction can weaken this directionality, and the noodle band V can be densified. .
In addition, since the same rolling rolls L1 and L2 are used to perform two-way rolling in the forward direction and the reverse direction, the noodle strip V is rolled with the same gap, which is gentler than the two-way rolling with different gaps. And the gluten structure of the noodle strip V can be more difficult to damage. Furthermore, the density of the noodle band V can be further increased by performing the total three times in the forward direction, the reverse direction, and the forward direction with the same rolling rolls L1 and L2, and it is also suitable for continuous rolling.
The noodle strip V can also be rolled in sequence by arranging a plurality of rolling units as described above in series. For example, as shown in FIG. 2, the present invention can also be applied to a noodle
In such a noodle
In this noodle
Further, the noodle strip V rolled to a predetermined thickness by the noodle
In FIG. 2, the noodle
4 and 5 show a specific configuration from the first rolling unit U1, U1 to the second rolling unit U2 constituting the noodle
Each of the first rolling units U1 has a pair of rolling rolls L1 and L2 for rolling the noodle strip in two directions, the forward direction and the reverse direction, and a drive for driving and rotating the rolling rolls L1 and L2. And a mechanism (in FIG. 4 and FIG. 5, the drive mechanism on the upstream side in the transport direction is not drawn). Since the left and right first rolling units U1 and U1 have the same configuration, only one (the right side in the figure) first rolling unit U1 will be described. Although only the first rolling unit U1 is described here, some or all of the other rolling units are passed through the noodle band in the same direction as the first rolling unit U1. The unit may be configured to be capable of rolling in two opposite directions.
As shown in FIGS. 5, 6, and 7 (a) and 7 (b), the drive mechanism is rotatable integrally with the
The
The number of teeth of the second
A
By using the noodle strip rolling device configured as described above, it is possible to gradually feed the noodle strip while rolling the noodle strip while repeating the forward feeding and the reverse returning alternately. Will be described while showing the rotational positions of the first
First, the
Subsequently, the
As described above, since the number of teeth of the second
