The beer-taste beverage according to this embodiment has an alcohol content of 10 v/v% or more, yet has excellent smoothness and drinkability. 〔ビールテイスト飲料の製造〕
麦芽及び糖類を原料として用い、麦芽使用比率を50w/w%以上として、常法によりビールテイスト飲料(試験例1のビールテイスト飲料)を製造した。なお、発酵前の原麦汁エキス濃度は約30w/w%であった。得られたビールテイスト飲料のアルコール度数は14.7v/v%であり、苦味価は31.8BUであり、色度は39.3°EBCであった。また、試験例1のビールテイスト飲料において、カプロン酸エチル含有量及びリナロール含有量は表1に示すとおりであった。試験例1のビールテイスト飲料に対して、カプロン酸エチル含有量及びリナロール含有量が表1及び表2に示すとおりとなるように、カプロン酸エチル及び/又はリナロールを添加し、試験例2~16のビールテイスト飲料を製造した。

〔官能評価〕
試験例1~16のビールテイスト飲料に対して、「スムースさ」、「ドリンカビリティー」及び「ビールとしての総合評価」の評価項目について官能評価を実施した。官能評価は、選抜された識別能力のあるパネル4名により実施した。いずれの評価項目も評点1~5の5段階で評価し、その平均値を評価スコアとした。また、いずれの評価項目も、試験例1のビールテイスト飲料の評点を1点に設定して、これを基準としてその他のビールテイスト飲料を評価した。結果を表1及び表2に示す。
〔sensory evaluation〕
A sensory evaluation was conducted on the beer-taste beverages of Test Examples 1 to 16 for the evaluation items of "smoothness,""drinkability," and "overall evaluation as a beer." The sensory evaluation was conducted by four selected panelists with discerning abilities.
