Abstract
Description
TECHNICAL FIELD The present invention relates to a refrigerated storage container for fruits and vegetables and a method for refrigerated preservation of fruits and vegetables.
Storing fruits and vegetables while maintaining their freshness for a long period exceeding one month has been studied. For example, when transporting fruits and vegetables overseas, in order to reduce costs, it is desirable to use sea freight, which takes about half a month to three months. In addition, it is desired to sell fruits and vegetables, such as grapes, whose production period is limited, at a high price by shifting the shipping period by about three to six months. In this way, in order to maintain the freshness of fruits and vegetables for a long period of time, refrigerated containers are used for sea freight transportation, and refrigerated warehouses are used to adjust the shipping timing. It is
Fruits and vegetables release water through respiration and the like, and dew condensation is likely to occur on the fruits and vegetables themselves, storage containers, packaging materials, and the like, especially during refrigerated storage. Condensation causes mold, discoloration of fruits and vegetables, and the like. Therefore, in order to prevent dew condensation, it is conceivable to use packaging using a paper bag or the like, or packaging material with holes. However, in these cases, the fruit and vegetables may dry up or wilt. In addition, in refrigerated containers and refrigerated warehouse storage, cold air or cold and humidity-controlled air is blown into large-capacity containers or warehouses to prevent temperature unevenness and dryness. However, depending on the location, due to temperature unevenness or the like, deterioration in freshness such as condensation, mold, or dryness may occur.
Therefore, a technique for suppressing dew condensation and suppressing discoloration of fruits and vegetables using a specific packaging material for fruits and vegetables containing cellulose acylate has been disclosed (Patent Document 1). Fruits and vegetables packaged with this fruit and vegetable packaging material are prevented from dew condensation and discoloration even after refrigerated storage for 14 days.
The packaging material according to the above conventional technology can suppress dew condensation and the like even in refrigerated storage by packaging fruits and vegetables. As described above, there has been a demand for a method for maintaining the freshness of fruits and vegetables for a longer period of time for overseas shipping of fruits and vegetables, adjustment of shipment timing, and the like.

At least part of the fruit and vegetable storage member within the range of 97 or less is in contact with the fruit and vegetable and stores the fruit and vegetable in a refrigerator while the fruit and vegetable is separated from the container member, and the container member has a lid and is made of polyethylene terephthalate. Alternatively, it is made of styrofoam and has a window formed from a fruit and vegetable preservation member.
Preferably, the fruit and vegetable storage member supports the fruit and vegetable and separates the fruit and vegetable from the container member.
The container member is preferably made of a material having heat insulation properties.
In the cellulose acylate, the difference between the equilibrium moisture content at 25°C and 80% relative humidity and the equilibrium moisture content at 25°C and 55% relative humidity is 0.5% or more and 3.5% or less as an absolute value. preferable.
Advantageous Effects of Invention According to the present invention, it is possible to provide a refrigerated storage container for fruits and vegetables and a method for refrigerated preservation of fruits and vegetables that can maintain freshness even during long-term storage of fruits and vegetables.
The preservation member for fruits and vegetables (hereinafter referred to as a preservation member) of the present invention is used for preserving the freshness of fruits and vegetables when preserving them. In general, the freshness of fruits and vegetables refers to freshness, that is, the degree to which deterioration of the quality of fruits and vegetables is not observed. , for example, to retain color, luster, shape, weight, freshness, or tension, etc., and to maintain quality to the extent that deterioration such as condensation or mold is not observed. By maintaining freshness, for example, it is possible to suppress changes in the appearance of fruits and vegetables due to discoloration, wrinkles, wilting, or mold growth, and weight loss due to moisture release that causes dew condensation.
The storage member of the present invention contains cellulose acylate. The cellulose acylate has a degree of acyl group substitution within the range of 2.00 or more and 2.97 or less. Cellulose acylate has an acyl group because the hydroxyl group of cellulose is esterified with a carboxylic acid. When the degree of acyl group substitution of the cellulose acylate is in the range of 2.00 or more and 2.97 or less, the cellulose acylate contained in the storage member has an equilibrium water content due to an increase in humidity caused by moisture released from the fruits and vegetables. rate rises. This increase in equilibrium moisture content causes the storage member to absorb moisture. The absorption of moisture by the storage member reduces the humidity in the vicinity of the storage member, thereby lowering the equilibrium moisture content of the storage member and releasing moisture.
Further, when the acyl group substitution degree is within the above range, deformation due to water absorption of the storage member due to an increase in humidity in the vicinity of the storage member is suppressed. Therefore, for example, when the storage member is used as a supporting member for fruits and vegetables, it retains the ability to support fruits and vegetables even if it absorbs water. In addition, when forming a part of the container member from the storage member, the shape of the container is maintained even when water is absorbed. In this specification, the term "support" refers to anything from slightly suppressing movement or vibration of fruits and vegetables to almost fixing fruits and vegetables, regardless of degree.
In addition, since the cellulose acylate contained in the storage member has an equilibrium moisture content with moderate moisture absorption and desorption properties, for example, when the storage member is used as part of a container for storing fruits and vegetables, the container can be sealed. Even in a state where the storage member is in a state where the interior of the storage member is maintained at a moderately high humidity level to suppress the thirst of fruits and vegetables, dew condensation occurs on the inner surface of the container, which is the surface of the storage member on the fruit and vegetable side. suppress. Furthermore, even if the temperature and/or humidity of the environment outside the storage member changes, the storage member keeps the change in humidity small compared to the change in the environment. Appropriate hygroscopicity of cellulose acylate is indicated, for example, by the difference between the equilibrium moisture content at 25°C and 80% relative humidity and the equilibrium moisture content at 25°C and 55% relative humidity, and this difference is 0 as an absolute value. It is preferably 0.5% or more and 3.5% or less.
The effect of suppressing dew condensation is obtained even during cold storage and lasts for a long period of time. As a result, the occurrence and proliferation of mold are suppressed, and fruits and vegetables are preserved in a fresh state for a long period of time. In addition, discoloration of fruits and vegetables is suppressed by being in an environment maintained at moderately high humidity and suppressing dew condensation as described above.
The smaller the degree of acyl substitution, the greater the amount of water absorbed by the storage material, and the easier it is to deform due to water absorption. Therefore, the acyl group substitution degree of the cellulose acylate constituting the storage member should be 2.00 or more. The theoretical upper limit of the degree of acyl substitution is 3.00, but it is difficult to synthesize cellulose acylate with a degree of substitution of acyl groups exceeding 2.97. Therefore, the acyl group substitution degree of the cellulose acylate constituting the storage member should be 2.97 or less.
The degree of acyl group substitution of the cellulose acylate contained in the storage member is more preferably in the range of 2.40 or more and 2.95 or less, and more preferably in the range of 2.70 or more and 2.95 or less. As is well known, the degree of acyl group substitution is the ratio of esterification of hydroxy groups of cellulose with carboxylic acid, that is, the degree of substitution of acyl groups.
The acyl group of the cellulose acylate that constitutes the storage member is not particularly limited, and may be an acetyl group having 1 carbon atom or an acetyl group having 2 or more carbon atoms. The acyl group having 2 or more carbon atoms may be either an aliphatic group or an aryl group. Further, it may have a substituted group. propionyl group, butanoyl group, pentanoyl group, hexanoyl group, octanoyl group, decanoyl group, dodecanoyl group, tridecanoyl group, tetradecanoyl group, hexadecanoyl group, octadecanoyl group, iso-butanoyl group, t-butanoyl group, cyclohexane A carbonyl group, an oleoyl group, a benzoyl group, a naphthylcarbonyl group, a cinnamoyl group and the like can be mentioned.
The acyl group of the cellulose acylate constituting the storage member may be of one type or two or more types, but at least one type is preferably an acetyl group. By using cellulose acylate having an acetyl group, the storage material easily absorbs moisture, so that the effect of suppressing dew condensation and the like becomes better. Most preferably, the acyl groups are all acetyl groups, that is, the cellulose acylate is cellulose acetate.
The acyl group substitution degree can be determined by a conventional method. For example, the degree of acetylation (degree of acetyl group substitution) is determined according to the measurement and calculation of the degree of acetylation in ASTM: D-817-91 (testing method for cellulose acetate, etc.). It can also be measured by measuring the acylation degree (acyl group substitution degree) distribution by high-performance liquid chromatography. As an example of this method, the degree of acetylation of cellulose acetate is measured by dissolving a sample in methylene chloride, using a column "Novapac phenyl (Waters)", and using a mixture of methanol and water as an eluent (mass of methanol:water The acetylation degree distribution was measured by a linear gradient from a mixture of dichloromethane and methanol (dichloromethane:methanol mass ratio of 9:1) from a mixture of dichloromethane and methanol (mass ratio of dichloromethane:methanol is 9:1), and a calibration curve with standard samples having different degrees of acetylation was obtained. is obtained by comparing These measuring methods can be obtained by referring to the method described in Japanese Patent Application Laid-Open No. 2003-201301. Measurement of the degree of acetylation of cellulose acylate is preferably carried out by high performance liquid chromatography, since additives are contained in the sample taken from the storage member.
The preservation member is used near the fruits and vegetables when preserving the freshness of the fruits and vegetables. For example, when storing fruits and vegetables, it is used for supporting fruits and vegetables, provided inside a container for storing fruits and vegetables, or used in combination with these as a part of a container for storing fruits and vegetables.
The storage member is used, for example, as a support member for fruits and vegetables. In this case, it is preferable to bring at least part of the storage member into contact with the fruits and vegetables. Also, the storage member is used as part of a container member for storing fruits and vegetables. In this case, part of the container member is formed from the storage member. Also, the storage member is used by being provided inside a container for storing fruits and vegetables. In this case, the preservation member is placed together with the fruits and vegetables in a container for preserving the fruits and vegetables. Also in this case, it is preferable to bring at least part of the storage member into contact with the fruits and vegetables.
The shape, size, thickness, etc. of the storage member are not particularly limited and can be appropriately set according to the type of fruits and vegetables. In this specification, the term "member" means an independent article, regardless of its shape or function.
The shape of the storage member is preferably film-shaped, bag-shaped, or sheet-shaped, depending on the type of fruits and vegetables to be kept fresh. Alternatively, it may have a tray shape for supporting fruits and vegetables.

The fruit and
The fruit and

Next, a refrigerated storage container for fruits and vegetables (hereinafter referred to as a storage container) includes a container member and a storage member. The container member is a container for containing and storing fruits and vegetables. A storage member is provided near the fruits and vegetables. Therefore, a refrigerated storage container for fruits and vegetables is provided with a storage member inside the container member. Specifically, for example, as shown in FIG. 5,
The material or shape of the
The
例えば、低密度ポリエチレン(LDPE(Low Density Polyethylene))、高密度ポリエチレン(HDPE(High Density Polyethylene))、直鎖状低密度ポリエチレン(LLDPE(Linear Low density Polyethylene))等のポリエチレン系樹脂;ランダムポリプロピレン、ブロック共重合ポリプロピレン等のポリプロピレン(PP(Polypropylene))系樹脂;ポリ塩化ビニル(PVC(polyvinyl chloride))、ポリ塩化ビニリデン(PVDC(polyvinylidene chloride))等の塩化ビニル系樹脂;エチレンアクリル酸共重合体(EAA(Ethylene/ethyl acrylate copolymer))、エチレンアクリル酸エチル共重合体(EEA(Ethylene/ethyl acrylate copolymer))、エチレンアクリル酸メチル共重合体(EMA(ethylene-methacrylic acid plastic))、エチレンメタクリル酸共重合体(EMAA(ethylene/methacrylic acid copolymer))、エチレンメタクリル酸メチル共重合体(EMMA(ethylene/methyl methacrylate))、エチレンビニル共重合体(EVA(ethylene-vinyl acetate))、エチレンビニルアルコール共重合体(EVOH、ethylene-vinyl alcohol)、ポリビニルアルコール(PVA(poly vinyl alcohol))等の共重合体;ポリスチレン(PS(polystyrene));ポリエチレンテレフタラート(PET(poly ethylene terephthalate))、ポリ乳酸(PLA(polylactic acid))等のポリエステル系樹脂;ダンボール等の紙、サトウキビ、葦、ケナフ、ファイバーボード等の木材等の自然素材;等が挙げられる。 As the plastic container, one made of a resin that is usually used as a container for fruits and vegetables can be used. For example, polyethylene resins such as low density polyethylene (LDPE (Low Density Polyethylene)), high density polyethylene (HDPE (High Density Polyethylene)), linear low density polyethylene (LLDPE (Linear Low density Polyethylene)); random polypropylene, Polypropylene (PP) resins such as block copolymer polypropylene; vinyl chloride resins such as polyvinyl chloride (PVC) and polyvinylidene chloride (PVDC); ethylene acrylic acid copolymers (EAA (Ethylene/ethyl acrylate copolymer)), ethylene ethyl acrylate copolymer (EEA (Ethylene/ethyl acrylate copolymer)), ethylene methyl acrylate copolymer (EMA (ethylene-methyl acrylate plastic)), ethylene methacrylic acid Copolymer (EMAA (ethylene/methyl acid copolymer)), ethylene methyl methacrylate copolymer (EMMA (ethylene/methyl methacrylate)), ethylene-vinyl copolymer (EVA (ethylene-vinyl acetate)), ethylene-vinyl alcohol copolymer Polymers (EVOH, ethylene-vinyl alcohol), copolymers such as polyvinyl alcohol (PVA (poly vinyl alcohol)); polystyrene (PS (polystyrene)); polyethylene terephthalate (PET (polyethylene terephthalate)), polylactic acid ( polyester resins such as PLA (polylactic acid); natural materials such as paper such as corrugated cardboard, sugarcane, reeds, kenaf, and wood such as fiberboard; Polymer alloys, polymer blends, ionomers, or the like of these may also be used. Compounds obtained by mixing various fillers, particles, etc. with these resins may also be used. Also, the resin may be foamed, and may be transparent or opaque. Also, it may be biodegradable. In addition, anti-fog processing, lamination, and other processing may be performed.
Among these materials, the
The shape of the
For example, the
Specifically, the shape of the
Moreover, the
For example, when the
When the fruit and
As described above, by putting the fruits and vegetables wrapped in the
Next, as shown in FIG. 9, when the fruit and vegetable sheet made of the fruit and
In addition, in the
2×10-4≦M/V≦500×10-4 (1) 2×10 −4 ≦M/V≦500×10 −4 (1)
The internal volume V (cm 3 ) of the
In addition, in the
Specifically, for example, part or all of the upper surface of the
Alternatively, at least one of the side surface and the bottom surface of the
In addition, in the
0.003≦S/V≦0.100 (2) 0.003≦S/V≦0.100 (2)
The internal volume V (cm 3 ) of the
As described above, by configuring the
It is preferable that a plasticizer is added to the cellulose acylate having the degree of acyl substitution within the above range in order to form the
The
The sugar ester derivative may be either a monosaccharide ester derivative or a polysaccharide ester derivative, and the
The monocarboxylic acid used to esterify all or part of the hydroxy groups in the monosaccharide and polysaccharide structures is not particularly limited, and known aliphatic monocarboxylic acids, alicyclic monocarboxylic acids, Aromatic monocarboxylic acids and the like can be used. One type of carboxylic acid may be used, or a mixture of two or more types may be used.
Preferred aliphatic monocarboxylic acids include acetic acid, propionic acid, butyric acid, isobutyric acid, valeric acid, caproic acid, enanthic acid, caprylic acid, pelargonic acid, capric acid, 2-ethyl-hexanecarboxylic acid, undecylic acid, lauric acid. , tridecylic acid, myristic acid, pentadecyl acid, palmitic acid, heptadecylic acid, stearic acid, nonadecanic acid, arachidic acid, behenic acid, lignoceric acid, cerotic acid, heptacosanoic acid, montanic acid, melissic acid, saturated fatty acids such as laxelic acid, Undecylenic acid, oleic acid, sorbic acid, linoleic acid, linolenic acid, arachidonic acid, unsaturated fatty acids such as octenoic acid, alicyclic monocarboxylic acids such as cyclopentanecarboxylic acid, cyclohexanecarboxylic acid, cyclooctanecarboxylic acid, etc. can be mentioned.
Examples of preferred aromatic monocarboxylic acids include benzoic acid, aromatic monocarboxylic acids obtained by introducing an alkyl group or an alkoxy group to the benzene ring of benzoic acid such as toluic acid, cinnamic acid, benzilic acid, biphenylcarboxylic acid, and naphthalene. Carboxylic acids, aromatic monocarboxylic acids having two or more benzene rings such as tetralincarboxylic acid, and derivatives thereof can be mentioned, and benzoic acid and naphthyl acid are particularly preferred.
In this embodiment, an ester derivative of sucrose, more specifically, a benzoic acid ester (Monopet (registered trademark) SB manufactured by Dai-ichi Kogyo Seiyaku Co., Ltd.) is used.
The ester oligomer is a compound having a repeating unit containing an ester bond between a dicarboxylic acid and a diol and having a relatively low molecular weight of about several to 100 repeating units, and is preferably an aliphatic ester oligomer. This is because the action of the cellulose acylate as a plasticizer is more reliable than that of the aromatic ester oligomer.

The above molecular weight of the ester oligomer has a molecular weight distribution, so the weight average molecular weight and number average molecular weight by GPC (Gel Permeation Chromatography), the number average molecular weight measurement method by terminal functional group measurement and osmotic pressure measurement, and the viscosity average molecular weight by viscosity measurement. etc. can be obtained. In this embodiment, it is obtained by a number average molecular weight measurement method by measuring the hydroxyl group or acid group of the ester as the terminal functional group.
More preferably, the ester oligomer is a dicarboxylic acid having 2 to 10 carbon atoms as a dicarboxylic acid, and a diol having 2 to 10 carbon atoms as a diol. In particular, both the dicarboxylic acid and the diol are preferably aliphatic compounds. This is because the use of the aliphatic dicarboxylic acid and the aliphatic diol can impart flexibility to the

The safety of sugar esters, ester oligomers, and acrylic polymers is described in the following documents. That is, with respect to sugar esters, see Journal of Synthetic Organic Chemistry, Vol. 21 (1963) No. 1, P-19-27, Daiichi Kogyo Seiyaku Catalog, Japanese Patent Application Laid-Open No. 2011-237764, and the like. Daiichi Kogyo Seiyaku Catalog describes sugar fatty acid esters and benzoic acid esters. Regarding ester oligomers, including the fact that they suppress migration to vinyl chloride as an additive to vinyl chloride, it is described in the website of the PVC Industry and Environment Association and in the materials of the Plasticizer Industry Association, and is recommended for blending with cellulose triacetate. Including, it is described in Japanese Patent Application Laid-Open No. 2009-173740. Acrylic polymers are described in JP-A-2003-12859 and JP-A-2011-154360. The safety includes not only the safety of the substance itself but also the safety of decomposition products of the substance.
In addition, since fruits and vegetables maintain physiological functions such as moisture release and respiration, when the

Here, the film manufacturing apparatus 10 (see FIG. 1) will be described. The
The
The
The casting die 24 continuously flows out the supplied dope 12 from the
A pair of
The
Regarding the dope 12 from the casting die 24 to the
The
In the case of the dry gelation method, the stripping from the
As described above, the
The
Next, the compact manufacturing apparatus 50 (see FIG. 3) will be described. The molded
成形体製造装置50としては、市販の装置、例えば布施真空社製TOM(Three dimension Overlay Method)成形機(商品名;NGF(Next Generation Forming)成形機)を用いることができる。
The molded
The
A procedure for manufacturing a molded body using the molded
Next, a
The

The first solid component is cellulose acylate. In this cellulose acylate, all acyl groups are acetyl groups and the viscosity-average degree of polymerization is 320. The acyl group substitution degree of the cellulose acylate was 2.86.
The second solid component is an oligomer (having a molecular weight of 1000 according to the terminal functional group quantification method) having repeating units of an ester of adipic acid and ethylene glycol, and is a plasticizer for cellulose acylate. The third component of the solid content is fine particles of silica, R972 manufactured by Nippon Aerosil Co., Ltd.

Four bunches (approximately 2600 g, within the range of 2500 g to 2700 g) of Shine Muscat (denoted as "S" in Table 1) immediately after harvesting were wrapped in strip film. The package was stored in a container B with a lid. Table 1 shows the window area S and the thickness of the fruit and
1. Dew Condensation State in the Containers After being left still for one month or three months, the containers A and B were taken out of the refrigerator, and condensation formed into water droplets on the walls of the containers in the
2. Fungi The grapes were visually observed after being allowed to stand, and the presence or absence of the occurrence of fungi was confirmed. Criteria for evaluation are two grades, ie, occurrence of mold and no occurrence of mold. Each evaluation result is shown in the "mold" column of Table 1.
3. Wrinkles The grapes after being left to stand were visually observed to confirm wrinkles in the appearance of the grapes. Evaluation criteria are the following three stages. A is a pass, B and C are a fail. Each evaluation result is shown in the "wrinkle" column of Table 1.
A: The wrinkles of the fruit are not visible.
B: Wrinkles are slightly visible.
C: Wrinkles are clearly visible.
その測定値をMB(単位はg)とする。
4. Weight reduction of grapes The weight of grapes before and after standing for one month or three months was measured. Let the measured value be MB (unit: g). Based on the weight of various grapes before being wrapped with the fruit and
5. Color Taste of Axis Regarding Shine Muscat, changes in the color tone of the stems of grapes were visually observed and evaluated for portions with and without flesh. Both stems were green immediately after harvesting began. Evaluation criteria are the following three stages. Each evaluation result is shown in the column of "Shaft color" in Table 1.
A: The stems are green in both fruited and non-fruited portions.
B: Part with fruit is green. The missing part is brown.
C: Both fruited and fruitless portions are brown.
[Comparative Example 1] to [Comparative Example 3]
In Comparative Example 1, the container A was stored in a refrigerator in the same manner as in Example 1, except that Thompson was wrapped in a belt-shaped film. That is, the grapes were stored in the container A without being wrapped. The weight loss rate of the grapes over time was measured gravimetrically. The presence or absence of condensation inside the strip film or inside the container, grape wrinkles, and mold was observed. Comparative Example 2 was the same as Comparative Example 1, except that the lid of container A did not have a window. That is, the entire surface was made of PET lid. In the case where the window was formed with a PET film without placing the fruit and
Comparative Examples 1 to 3 were also evaluated in the same manner as in Examples. In Comparative Example 1, dew condensation and mold occurred after one month of refrigerated storage. In Comparative Example 2, the weight loss was relatively large at 1% per day, and the evaluation of wrinkles was unacceptable. In Comparative Example 3, dew condensation and mold occurred after one month of cold storage. Each evaluation result is shown in Table 1. In Comparative Examples 1 and 2, since the
